With enough villagers, multiple golems will spawn. I've seen one with three golems.
It might have not been a mistake it is possible for a village to have 2 and maybe 3 golems if it has enough villagers
You think seeing two iron golems in one village is not normal? Try finding five iron golems in one village in bedrock edition
Fun fact: mojang was working on the dream dimension aka the aether dimension, you could access it when sleeping, but then mojang started working on the nether so then the aether dimension is just a distant dream

To be honest, if emerald armor was the best armor, it would also be the 2nd cheapest, because you can just farm fletchers for emeralds. The reason why its not the 1st is because iron is easier to get, and 32 sticks are a little expensive. Also villagers aren't always found in the beginning, and mining in mountain biomes aren't worth it, since they rarely spawn in there.

There's a nice mod pack I use for my single player where you can make emerald it's as hard as diamond but has the life of gold if that makes sense.
