This this video I will show you how to make Mango Milk Tea from Powder using restaurant grade professional quality ingredients used in Boba Shops all over the world.
I owned Award Winning Bubble Tea shops for over 5-years, and this recipe is very popular! Mango Milk or Mango Milk Tea is a great choice to keep on your menu.

🧋Side note: the industry standard Brown Scoop that I am using is approx 20ml in volume. This equates to a heaping Tablespoon. You'll want to pre-measure your own bubble tea scoops so you know which size you're using for your own measurements.
Also, if you're in the USA, I would suggest switching to measurements of volume using milliliters and grams instead of cups and ounces, etc. I personally find it to be a more precise system of measuring ingredients! 😎
Ingredients:
❤️ 2 scoops Mango Powder (approx 2 heaping Tbs)
❤️ 2 scoops Creamer Powder (approx 2 heaping Tbs)
❤️ 2 pumps Fructose (14ml or .5oz)
❤️ 25ml Hot Water (just under 1oz)
❤️ 150ml brewed Assam Black Tea (5oz)
Directions:
❤️ Put the powders and fructose into the shaker cup.
❤️ Add the hot water and stir well until combined.
❤️ Add the brewed black tea & stir again.
❤️ Put a scoop full, or about 5-6 large ice cubes in the shaker.
❤️ Put all the shaker pieces together, and shake for 1-2 minutes.
❤️ Add toppings to your boba cup, pour, seal and enjoy!

"It is common for tapioca flour to sometimes be called tapioca starch. Our tapioca flour is the same thing as tapioca starch, however you need to be aware that there is a third choice called tapioca flour/starch often found in stores that cater to a Caribbean and South American clientele."

Can you make one for match green tea, love the way you explain and demonstrate every step!
Matcha is made the same way but let me explain.
The product will probably be different... so I've tried a few different ones for example. One was a 2-2-2 way like in this video.
The other was an 'All In One' called AIO, which is 4-scoops only.
Then there the more expensive way, which is using a premium pure matcha powder. That one you'll just make it more like an iced latte. I have a few videos showing how to do that on my YT channel.
Then... What I did was offered my customers a Green Tea base or a Black Tea base. Because both bases offer a different flavor experience. Smokey vs floral type thing.

Well, right now not many people can buy boba really... It's quite difficult to source, But when I owned my shops in the UK, I bought my boba from 'Boba Box UK'. They supply the UK and Europe.
You could also contact suppliers and inquire about getting shipments direct from Taiwan. But if they have any stock available to sell I would be surprised.

Hi Kristin. Thank you for your awesome videos. I love bubble tea but love frappe versions even more. A few questions. Instead of fructose, is there a healthier substitute that you would recommend which doesn’t affect flavor? For example create a comparable “sugar” mixture with monk fruit, erythritol, stevia etc. Secondly, how do you adjust the recipes to make frappe versions? Thank you again!
Hello 👋🏼 Good question.
You can look at this a few different ways. One of them is that a lot of bubble tea supply syrups and powders are already quite sweet, so you might not actually need to add any sweetness at all. The other way to look at it is just simply taking the base recipe, omitting any added sugars, and then adding little by little, side by side, different types of sugars and quantities and then lining them all up again and trying them out after you've shaken them one by one, etc. Be sure to take meticulous notes and label everything, and this will allow you to find an excellent sugar alternative base. It would appear that the wolfberry bubble tea is simply a milk base with a butterfly pea blue flower drink on top? People stir it in and the drink becomes blue. (I have made a butterfly pea Jasmine tea in a prior video if you were looking for something similar/the same thing.)
And it would appear that the moonlake bubble tea is simply a type of branded bubble tea where the tea leaves come from moonlake, Taiwan?
I've never heard of both of these drinks but I looked them up and that's what it appears they are.

Hello. That's a good question. 👍🏼
Let me begin by saying, as a general rule of thumb, bubble tea shop supply powders are used for milks and milk teas. And bubble tea shop supply syrups are used for fruit teas and coolers/watery drinks without tea.
The thing is, as soon as you get into other types of products that you can use, so for example perhaps a freeze dried dragon fruit powder that's been ground up into a very fine consistency, well that's technically a powder but it's not from a bubble tea shop supplier. In that case that powder would be used for a fruity drink or to flavor a lemonade. But wouldn't necessarily go good with a milk tea as it's too light and might not dissolve actually! 🤯.
It really comes down to where you're getting your products from. But majority of bubble tea shop suppliers will generally stick with the basic rule of powders for milky drinks and syrups for fruity tea drinks.
However, you also don't want to overlook the non-bubble tea shop type syrups, such as Monin or 1883, which can easily be added to both fruit tea drinks or milk tea drinks... More advanced shops will use these for flavoring both milky and tea drinks.
But if you are a beginner shop or a beginner bubble tea connoisseur looking to make drinks at home, and you are using bubble tea shop supplies, best to stick with the rule of thumb which I stated above.

I'm in the UK and have found a company called 'Boba Box UK' (or EU) to have very good equipment. However if you're in the US, be sure to look around and find machines which either have a warranty or guarantee with excellent reviews before buying.
Alternatively eBay is always an option. They'll be used, but if you have an electrician friend you can 'trade' with drinks... they're most helpful in doing quick repairs! Saves money too!

Yes, for a recipe with no tea, do everything exactly the same, but the liquid becomes 150ml.
Re: teas, yes. If you've got a small shop, stick with 1-3 basic teas.
I used Jasmine Green Tea, Assam Black Tea, and Roasted Smokey Oolong.

Yes, powder is probably the best bet for a mobile van 👍🏼

So one-minute it good. But it also depends if you're using my drink recipe technique.
Some places use a different technique and only shake for 30-seconds because they don't need their ice to melt.
Foam is okay. There's where bubble tea got it name 🤣
If you don't want it though, either use the top or middle part of the shaker and scrape it off after doing a 'dirty pour'. Or alternatively use the strainer on the shaker and you won't get as much either.👍🏼
Can you plz link us to buy the small plastic measuring cup? The one you used to measure the water.
I bought mine of eBay. They're just 500ml jugs... but 300ml would work too. :)
Hi! Is your insulated container for your hot water the same as your tea ones?
Hi Aleesha,
The hot water urn is not insulated. It has a heating system inside of it where every 15-30 minutes it reheats the entire water inside the urn again, depending on the outside temperature.
Whereas the tea urns are insulated, so they work pretty well in keeping hot brewed tea at a warmer temperature throughout the day... But not super hot.

Coffee Creamer won't taste the best... I wouldn't recommend it.🤷🏼♀️🤦🏼♀️
I would suggest doing an online search for a local Bubble Tea Supplier or a company who ships/offers Small quantities for home use.
They all stock basic Creamer Powders for boba drinks.
Or, since it's used quite often over flavour powders... You could buy a big 1Kg bag full. It will keep in an airtight container for a good while.

I used old bubble tea syrup containers that were washed out with hot soapy water and thoroughly dried. Then I would transfer the fructose syrup from huge 25 kilo drums into the smaller syrup containers. This made it easier to store in the shop also. Then whichever pumps fit the syrup containers I used for those small fructose jugs as well. Pumps come in different size distributions such as 5 ml, 7 mL, 10 mL, etc. Hopefully this helps. 😎
When I was growing up, I have the hardest time understanding, math when it comes to measurements like milliliters ounces pounds micrograms and other things like that eventually, I was able to understand simple things like pounds and ounces and liter that’s about it

If you have bubble tea shop grade A tapioca balls, put a single portion into a medium pot of boiling water. Cook for 30-minutes, stirring occasionally. Turn off the heat, let it sit for 15-minutes. Drain and wash. Then put the cooked boba pearls into a sugar solution. OK? 😂😂😂 Good luck!

Hey, Kristin! Do you think it's a good idea to keep the tea cold in the tea urn with some ice to water ratio so that the cold tea base add up with some more ice cubes would make the drink super icey and refreshing. Every time when I add only that much of ice cubes to the 85degree celcius of 150 ml tea would dilute the ice level of the drink.

Yes, that's totally fine.
Honestly it's whatever works best for you... Just as long as the drink tastes good every time for the customers 🥰
The thing you'll want to keep in mind, is to make sure that the powders dissolve. The difficulty with using a cold liquid base, is that the drink may stay powdery or have little bits in it.
Also, are you sure the tea base after brewing for 10-minutes is still 85C? Because after it's sat out for all that time... The temperature should drastically go down after brewing.
Last thought, is that the recipe in the video is for a strained 350ml cup... No ice is usually added at the end... Perhaps if you're wanting ice, after you shake it, simply pour the entire contents of the shaker into a larger size cup... This way you'll have ice still in your drink.

I think it would be helpful if you are able to watch some of my other videos as well, because you will see that a lot of the recipes are similar and tend to align.
They might help in answering your questions a little more.
But basically there are three main components of the drink which consist of: the bubble tea creamer powder, the bubble tea flavored powder, additionally fructose, and then of course the liquid which will be the black tea.
The mango powder does have a little bit of creaminess and sweetness to it, but it is not enough. This is why I call it a flavored powder, because it really is the flavoring for the whole drink.
It will need to be supplemented with creaminess, such as the bubble tea creamer powder or dairy milk or milk alternative, and will also be supplemented with some sort of sweetness, like fructose or similar.
I hope this makes sense. Again, if you watch some of my other videos for the milk tea drinks, it should make more sense and will assist and supplement your knowledge of the bubble tea drink making process 😍😍😍

As you said, there are so many variations of bubble tea recipes out there, and really it comes down to your personal preference, or in the case of the business, your customers personal preference.
Once you're able to have full access to mango syrup, mango powder, etc... and all the extra stuff like bubble tea shop creamers, fructose, etc... It will be easier to play around with recipes in person, opposed to theory.

Great tutorial, Kristin. Does the mango powder you're using have any non-dairy creamer in it already? Most of the powders I am coming across say they have non-dairy creamer in the ingredients. If this is the case is extra non-dairy creamer or milk needed on top of what is already in the powder? Also, have you ever considered using an electric frother wand for the first powder mixing step as opposed the spoon? Or would that make it too bubbly? Thank you!

All the base flavor powders will have just a tad of the non dairy creamer powder in the ingredients, yes. But it's definitely not enough to only use that to make a drink. Believe me... If you ever make a drink and forget to add some sort of creamer powder or milk, etc... You'll know 😂😂😂 it will look totally different and taste... Yuck! 😉😬🤪
I've known of a place to use a whisk for the first step... Does it save time and energy...? Eh. Probably not a ton.
So it's up to you if you want to include an additional step with an electric item which might break over time when it's not really necessary.
But totally up to you! Give it a try either way 💪🏻🥳

Hi Kristen! You said that all powders are different and not all have the same consistency, so what powder do you use? Like what brand? And instead of using creamer powder could we use normal creamer?

I'm in the UK and prefer the brand 'Boba Box'. But they also have an EU branch as well.
You could use Half and Half in the US or single/double/whipping cream in the UK.
You might need to experiment with the quantities a little bit so you are getting just the right amount of creaminess, but it is possible.

If you're a business would recommend doing a google search for something like "bubble tea supplier near _____" And insert your nearest big city. There are so many everywhere, but as they're geared towards businesses, you have to seek them out.
If you're wanting for at home, do the same, but search "At home bubble tea kit" or "at home bubble tea supplies". There are now lots of companies selling to at-home consumers online.

I'm not a business, so I have done a lot of research in the past weeks, but it seems, there are no companies near me selling the exact powders I am looking for. I tried reaching out to wholesale companies, but sadly they only offer MQO and free samples to customers who are looking to open a business. Unfortunately, I do not intend to do that, so I'm kind of lost at the moment. The only option left would be to order internationally, which can be quite expensive.

Or maybe search for a small "Box" from a local company? Some fo small box sets of a few different flavors to make at home type thing...

In the meantime, once you've made your drink as per the recipe, simply throw in a Yakult at the end and stir it in.
This should do the trick. In future after that, change up ingredients levels to get the flavor you desire. 👍🏼

I recommend an automatic machine. No staff wants to be pulling down a pole like Las Vegas slot machine 1,000 a day. 😂🤣
Any brand is fine, but you want to find a brand that has a lot of good recommendations and has been in business for a long time. Sometimes local suppliers sell the machines and guarantee warranty or assistance with troubleshooting.
Even better if every few years the company you buy from releases a newer upgraded model. Also you want to find one that will fit your cups sizes and have special features where staff will not burn their hands on the hot iron, etc.

I'm not personally familiar with Tang.
Fructose can also be found in powder form.
If you watch other recent videos, I use it more often because it's easier to purchase online than syrup.

Powder Creamer from a bubble tea shop supplier is best for a thicker creaminess, and it doesn't need to be refrigerated. It is also usually lactose free for people with stomach difficulties.
In some countries people making drinks from home want to use store brand creamer like Coffee Mate, but this tastes different and will make the drink taste strange as it has a certain flavour added.
But normal powder creamer from a supplier is best if possible. Each have a different taste so try many before you buy in bulk. And make sure the brand doesn't clump either.

I conducted side by side taste tests with all our powders and syrups.
What I found was that 99% of the powders were best with Assam black tea.
For the fruit teas, actually, I ended up dividing all the flavors into 3 tea categories: Assam, Jasmine green tea, and smokey Oolong.
For my YT videos, I usually do Jasmine gt because it's the safest option. Can't go wrong using it for a fruit tea. But there are some videos I've done when I paired the fruit with Assam or oolong if applicable.

Yes. Probably better mango concentrate opposed to syrup. The majority of syrups' flavor profiles are for fruity tea drinks and don't taste nice with milkiness.

20 oz is about 600ml
My recipe does a 350ml.
So..... For the 20 oz, double my recipe. Easy 😂
For the 16oz, add an additional a half of everything, because it's in-between. So 3 scoops of each, etc.
Or always consider putting ice into the bubble tea cup after the topping, which will also bring the overall volume up.

A flat scoop full only.
Our cups were 360ml max for the smallest size... We'd put in a flat scoop full of a topping, and pour the liquid only on top.
So the topping has been accounted for in the measurements, because it was very rare anyone wanted a drink without a topping.
So topping with drink was 350-360ml max with flat lid sealed on top.

There are many varieties of Fructose substitutions.
But if you're a bubble tea shop, I would suggest Fructose as it is the cheapest and delivers the best flavor enhancement to the drink.
If you're making it from home, then best to sample different alternatives and keep a note book to make notes on which you liked best and how much you used.
For example: real maple syrup, cane sugar, beat sugar, stevia, brown sugar, etc. All have different measurements for the desired sweetness...
If you're making alot from home, you could also Google how to make a strong simple syrup from sugar and keep that in your fridge for the week - it's similar to fructose in that it is like a syrup...

@@ileadunaway if you're doing it for home use, then again, I'd say to give it a try (although measurements would be different as the base product is different) but for a shop setting, I'm not sure if it would be a cost effective option as I have never looked into it properly.
But sourcing things yourself is what makes owning any type of shop fun and interesting... Different types of items/products, prices, variants of things, etc.

Hiya - The brand I used at my shops is 'Boba Box' here in the UK - they also ship to Europe. If you wanted to do Strawberry - just switch out the exact same measurements of the flavored powder. Still stays 2-2-2 😉 You'll need to source strawberry powder from a bubble tea supplier in order to get a similar taste as one from a boba shop. 😳

In the UK, I was able to use 'Boba Box UK' for all of my powders, syrups, toppings, etc because they are the largest supplier in the UK and Europe and they offer a wide range of these items from different manufacture companies in Taiwan.
However I know a lot of middlemen suppliers in America only offer one range and or type of product.
So depending on where you are in the world, that will make the big difference. 👍🏼

1.) Each powder weighs different. So when I was costing out eat type of beverage, I would actually a weigh scoop of each flavored powder and calculate that from the weight of the bag.
2.) Simply double the recipe, and after you've shaken it in the shaking machine, if it doesn't strain out all the way to the top, even after you put topping in, then do a 'dirty pour' with the ice, etc.

If you are a boba shop or wanting to start one, I would recommend searching online for as many direct import from Taiwan bubble tea companies, write to them and tell them, and ask for sample packs.👏🏼
This way you can trial many different companies and pick your favorites.

I enjoy using Routin 1883 and Teisseire because they're less sweet. This way you can mix flavors and be in control of the sweetness of the drink. But it will also depend for you: cost, shipping, etc. But Monin does have a range of Mango smoothie mix with pulp, which may actually be fun to experiment with for a fruit tea!

Because each and every bubble tea shop has their own special requirements for equipment, I don't include a full generic list. I wouldn't want people to go out and buy expensive equipment they don't need. So many times I speak with shop owners who didn't mentor with me and they share how many hundreds or thousands of dollars they spent on equipment and supplies they never used... just because a boba supplier gave them a list and told them to buy everything. So sad. :(
But one thing I make sure to do with all of clients I mentor one-on-one with, is to spend one session alone going over which equipment they would best benefit buying in regards to the drinks and menu items they're selling. I don't give any specific brands they should use, I only share what I used, and if it's applicable in their country/price range, they're able to purchase similar.

Your country should easily be able to buy from a reputable bubble tea supplier in the EU area, no worries. I wouldn't recommend getting drink supplies direct from China. They're not as strictly regulated as Taiwan.

I wouldn't expect to make a mango milk tea using fruit tea syrup, because the base flavor component of fruit tea syrup is meant to be into a cooler or a tea, it is a very bright mango type flavor.
The flavor that you want to get for a mango milk tea should be creamy and a more rich flavor.
If you do decide you want to go for a syrup route and achieving this, then you'll need to get a few different types of brands and experiment with them to see which one gives the best overall flavor. Probably it won't end up being a bubble tea syrup, but a coffee syrup, because that is better for a richer deeper flavor profile.
Don't forget also that you want your drink to be as creamy as possible, so if you're omitting the mango powder from a milk tea, you'll you might want to add more creamer powder to make up for the lost creaminess from the mango powder that would have been there...

@@Alexis-od7tx yes I agree. Well, I find condensed milk is too watery and clear to give any particular design on the sides of the glass. It's also not quite thick enough when you put the drink in you'll still see it.
So I think mixing condensed milk with a strong cream or whipping cream, or some sort of walling powder either made up or bought from a bubble tea supplier is the best way to go, especially if you are looking for a very strong walling design on the side of a glass. 😇
