That recipe is absolutely brilliant, and works exceedingly well with Seville Oranges.
Chef Julien, how long did you bake the cake for?
According to Claudia Roden (who makes an almost identical cake), it's about 1 hour. HOWEVER, the time will depend on how big the oranges are - the bigger the orange, the longer it will take!

I am going to make that orange and almond cake! I am not going to tell a French baker how to cook but I think I am going to tweak the recipe a bit. Cooking 2 oranges on the stove for 2 hours is just too much as I am likely to burn them. I am going to use my electric pressure cooker or slow cooker.
The right kind of pressure cooker would lock in even more of the aroma. A pressure cooker that has a spring-loaded valve system seals in aroma. This is a great idea.
Gluten is my happy drug.

made tis cake using quinoa flour..its the best cake i ever did...for those who dont have a sweet tooth like me use alittle bit less sugar.maybe mine was too sweet from my red super sweet sicilian oranges.overall its a great cake.

In the US unless you live on an orange orchard in Florida you are going to get an inedibly bitter cake. The pith will never loose its bitterness in the average orange.
You need to blanch 3 X in clean boiling water to remove bitter oils.

I made this cake in a blender today. It came out fine. I did everything he did, except in a large capacity blender, instead of a food processor. It really is easy. Go for it!

I used three oranges as they were a bit small and the cake was too wet. Do you have a weight in grams on the amount of oranges to use? This is the first time that a recipe didn't work for me so I suspect the amount of liquid was the culprit.

We're you using a convection oven?
What’s the ingredients with measurement cups? Also what’s the oven temperature with Fahrenheit ?
170ºC = 338ºF. 325ºF is about as close as American ovens get. I will use an oven thermometer to see how close I can get to 338ºF. 338 is exactly half way between 325 and 350; I'm not sure if it would be better to round up or down. A poster on another website suggested 32 minutes baking time.

No oil or butter. Just fat from the yolks, and moisture from the oranges and eggs. Delicious!

2 large oranges boiled for 2 hours. Remove Oranges from heat when finished and remove top and bottom and discard. Then split in two and remove any seeds and place into blender rind and all. Then add 300g - 1 1/3 c ground almond flour and add to blender. 300g - 1 1/3 c sugar. Add to blender. 1 tsp cinnamon add to blender. 2 tsp baking powder add to blender. Next add 7 whole eggs and add to blender. Mix well. Spray 10" X 4" pan with non stick PAM spray. Set oven to 350 degrees F or 170 degrees C and bake for about 32 minutes. Check center with tooth pick until nothing sticks to tooth pick and outside is golden brown. I believe this is it. Not bad for an American high school drop out is it? Moo.

I followed your instructions step be step, it looked great and all ready with a great rise while inside the oven. However once i removed it from the oven, it became all flat and Yacky!!!!! HELP!!!!!!
