  • Know to prepare Mangalore Udupi Brahmin style Majjige Huli from Kumbalakai. A traditional recipe from my mother. Narrated in Kannada with English subtitles.

    Ingredients:
    Ash Gourd or Kumbalakai - 3/4 Kg cut into big pieces
    Salt
    Jaggery - 1/2 tsp
    Fresh Curd or Buttermilk - 1 Cup
    Fresh Grated Coconut - 1 and 1/2 Cup
    Rice - 2 tsp
    Green Chillies - 3
    Cumin Seeds / Jeera - 1 tsp
    Curry Leaves - 6-7
    Coriander Leaves
    Seasoning Ingredients:
    Ghee / Coconut Oil - 1 tsp
    Mustard Seeds - 1 tsp
    Sun-dried curd Chilli - 1
    Method:
    1. Cook the cut Kumbalakai or Ash Gourd in a pressure cooker for 2 whistles and keep aside. Wash and soak 2 tsp Rice in a bowl for half an hour.
    2. Add 1 and 1/2 Cup fresh grated Coconut to a mixer jar. Add 1 tsp Jeera or Cumin Seeds and 3 Green Chillies and grind to a coarse texture.
    3. Swipe the sides of the jar and add little water and ground to a smooth paste and keep aside.
    4. Now add cooked Ash Gourd or Kumbalakai in a vessel. Add Salt as per taste and add 1/2 tsp Jaggery and boil it for 5 minutes.
    5. Add the ground paste to the vessel and add little water and boil the mixture for 7-8 minutes.
    6. Add 6-7 Curry Leaves and mix well.
    6. Now add 1 Cup Curd and boil the mixture for 5 minutes. Add finely chopped Coriander Leaves and mix well. Switch off the flame.
    7. To a small frying pan, add 1 tsp Ghee or Coconut Oil. I used Ghee.
    8. Once Ghee turns hot, add 1 tsp Mustard Seeds. Once the Mustard seeds splutter, add 1 cut Sun-dried Curd Chili and fry till it turns dark brown in color. Switch off the flame and transfer immediately to the Majjige Huli.
    Now Mangalore Udupi Brahmin Style Majjige Huli is ready to serve. Serve the Majjige Huli with hot Rice. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well. Thank you.

      @@CookWithHemaAdiga i think i soaked rice in excess n hence the consistency was thick...but everyone enjoyed having this ..next time, I'll make sure i soak maybe a little less of rice ( i soaked 2 spoons this time). Once again thank you for uploading this recipe.       Kai kadi antha helidre ellarigu confuse agatte. Ella recipe gu correct measuring cups alate helthini. Kai kadi helidre, ondodu Kai size bere iratte, usually sanna Kai adre andajige 3/4 kai bekagatte.

      Panasonic mixer I am using from past 5 years. It is really good. Now you get many varieties in Panasonic mixer. Compact ones. I have three jar mixer. I feel 3 jar is sufficient. Hope this information helps 🙏

      ಖಂಡಿತ. ಮಜ್ಜಿಗೆ ಹುಳಿಗೆ ಬೇಳೆ ಹಾಕಲ್ಲ. So, ಹುಳಿ ದಪ್ಪ ಬರಕ್ಕೆ ಮೈಸೂರ್ ಬೆಂಗಳೂರು ಸೈಡ್ ಕಡಲೆ ಬೇಳೆ ಹಾಕ್ತಾರೆ, ನಮ್ಮ ಮಂಗಳೂರು ಉಡುಪಿ ಕಡೆ ಅಕ್ಕಿ ಹಾಕ್ತೀವಿ. Since we do not use lentils/dal to make the Majjige Huli thick, we need to use either rice or Chana dal to thicken it a bit for better taste and consistency. Hope this clarifies.
