  • Colatura is an anchovy extract that is as good as liquid gold! So buttery, smooth and elegant its scent is like a magical kiss. It turns ordinary pasta into something uniquely special. Ceck out my recipe below.
    1 LB Good Quality Spaghetti
    ¼ C Extra virgin olive oil
    1 OZ Colatura or more to taste
    1 Generous TBSP garlic paste
    1 TBSP Red Pepper Flakes
    1 TBSP Kosher Salt
    1 TBSP Coarse Ground Black Pepper
    Zest of 1 lemon
    ¼ C chopped fresh basil
    1 C fresh chopped parsley
    1 C grated parmesan cheese

    How does Colatura compare to asian fish sauce in flavour?

      @stevefrench7036 no comparison. Asian fish sauce is pungent, almost sour with an overwhelming oily fishy flavor and smell. Delicious though. Colatura is buttery, sensuous, understated and elegant in its briny/sea flavor. If I didn't know, I'd never guess it was from anchovies.
