I have never been able to make hummus successfully as yet with the immersion blender. Often the texture is not right, or it's to stiff that the blender get clogged. This must be the most revolutionary tutorial ever. Thank you for changing my life with these amazing techniques and recipes! Wonderful content!

Every time I slowcook a potroast or pork shoulder I bed the meat on lots of onions. They are buttersoft after cooking and when I then use a stick blender the onions thicken the sauce without having to add high calorie thickeners like cream or butter. And taste great...

Dessert whip, using chilled skim milk, a little castor sugar and drained pineapple pulp (need a whip attachment blade). My mum would make this for afternoon tea, and it was so light and delicious. She was a Bamix demonstrator, where she learned the recipe from. That was about 35 years go! Which is why I won't buy anything but a Bamix today. It's the longevity factor. I've had my first Bamix, nearly 10 years now. I've just ordered a grinder mill, to replace my old one too - the same company still makes the exact same parts. The original blender unit however, is still going strong.

I use it to make home-made tomato sauce each summer. I have an eight quart slow cooker that I fill with chopped roma tomatoes from the garden, and a bit of garlic, onion and bell peppers. I let it cook on slow for 24 hours, and then let it continue to cook for another 24 hours with lid off and a screen across the top. This reduces it down to about half the pot. I do keep the skins on and the seeds in. It makes it much more nutritious, but it can add a hint of bitterness to the sauce. I forgo the sweetener, but others who do the same add some in. (My wife is Filipina, and to her, bitterness is a feature, not a bug. After all, the favorite veggie in Southeast Asia is named the "bitter melon".) After the sauce has thickened enough for me, I use the immersion blender to reduce everything to a nice paste sauce. I put two cups into freezer bags, and enjoy them for the next six months in all kinds of soups, stews, chilis, and sauces.

P.S: For using 'maters, blanch the skin and remove all seeds. If the purre has a pukey taste.. add pinches of white, brown sugar or molasses and/or maple syrup. It is all up to your taste buds.

Steve's Kitchen Thanks Steve for your prompt reply ... I usually make your previous hummus recipe ( great success with my lads and friends) just made the one can chick peas recipe ... fab 👍. We love parsley ... it’s the ratio of cous cous to stock I seem to get wrong either to dry or too soggy! ... I will make the effort to join you on our live stream soon to hopefully contribute with your friendly audience ... sorry to bother you with the cous cous question as I appreciate you are very busy! Best wishes John 👍😊

No worries John, CousCous is a Tricky dish it can go from Fabulous to Saw dust in a blink.. I'll see if it can be added to a series in the future but no plans as yet.. :o)

Is it possible to use an immersion blender like this to grind whole spices (small seeds only like coriander, cumin, fennel etc)?
