    ** Recipe **
    • 2 tbsp Olive Oil
    • 8 Chicken thighs, skin on or off, your choice
    • 6 Medium Shallots (thinly sliced)
    • 12 Garlic Cloves
    • 1 cup Dry White Wine
    • 1 tbsp Plain / All Purpose Flour
    • 1 ltr Chicken Stock
    • 1 cup Cherry Tomatoes (Sliced in half)
    • 1 cup Green Olives (pitted and sliced in half)
    • 1 tbsp Herbs de Provence. (Alternatively use Thyme, Basil, Rosemary, and Tarragon in equal parts)
    • 3-4 sprigs Fresh Thyme or 1 tsp dried Thyme
    • 1 Bay Leaf
    • Salt and Pepper to taste
