Since the official recipe is behind the NYT paywall, here's what I took from the video: Buttery Guava Twist Cookies By Genevieve Ko Ingredients 1/2 cup/113 grams unsalted butter, softened 4 ounces/116 grams cream cheese, softened 2 tablespoons granulated sugar 3/4 teaspoon fine sea salt 1 large egg, yolk and white separated 1 cup/130 grams all-purpose flour, plus more for rolling dough 11 1/3 ounces/320 grams guava paste, chilled Sparkling sugar, for sprinkling (optional) Directions Beat butter and cream cheese until light and fluffy, about 5 minutes, scraping bowl and beater often. While the butter and cream cheese are beating, add sugar and salt to incorporate. Add egg yolk and beat in. Add flour all at once, beating on low speed just to combine. Finish blending by hand to ensure it doesn’t get overworked. Divide dough into 2 pieces. Make into a rectangle wrapped in plastic wrap and chill until very firm or up to 2 days. When ready to bake, cut chilled guava paste into ½-inch by ½-inch by 2-inch batons. Preheat oven to 350F. Roll dough on floured surface with floured pin to ⅛-inch thick rectangle. Cut 2-½- inch by 1-½-inch rectangles with pizza wheel. Lay out dough rectangles ½ inch apart on cookie sheet. Lay guava paste batons on dough at an angle, corner to corner. Wrap opposite corners of dough over guava baton. Beat egg white until foamy and lightly brush onto top of pastry. Sprinkle sugar over egg wash. Bake for 13-15 minutes.
We have something similar in Brazil! You can find all sorts of guava or goiaba (in portuguese) in bakeries here, also we often eat the goiabada (guava paste) with sliced fresh cheese as a snack with afternoon coffee, it's called Romeo e Julieta, so if you come to Brazil and see that as a flavor name it's guava with cheese and it's delicious ✨❤️
Love love love pastelitos, will definitely make these. I have a guava tree in my back yard, we usually have an abundance in the late January. Such a wonderful fruit
We have something similar in Colombia with puff pastry, it is called pastel gloria. The filling has bocadillo (guava paste), cheese and very frequently people also add arequipe (dulce de leche). They were a real treat for me.
Oh look! Mini costillas de guayaba. This is a classic costarican pastry found throughout Costa Rica in pretty much any bakery. We LOVE them. My grandmother taught me how to make my own jam. Paste or jam, any are HEAVEN
I used quince paste (membrillo) as a guava paste sub since I couldn't find it easily. Similar texture (and stickiness), and worked in a pinch! Skipped the pretty sugar since the paste was on the sweet side. Really lovely cookie!
I wanna make these beautiful cookies but with a twist...does walnuts pair with the guava paste?🤷🏾♀️ I would like to mix some with the sweet guava paste for a nutty texture in the cookie filling.. Thanks!👊🏿
If the guava paste is this texture you're not going to be able to mix things into it. Maybe finely chop the walnuts and sprinkle them on instead of sugar?

Probably still very good with puff pastry, but I think the idea of these cookies (and the whole series NYT is doing this week) is that they keep well, and are easily packed/shipped. That wouldn’t really work as well with puff pastry
Those look fantastic. You should know fresh Guava dose not taste anything like the yummy jam. They are green with a white inside - like a pear. Unless they are right off the tree they have a strong, and by most counts, horrible small. Go for the exotic feel but know it is totally different than the reality.
What a RIP OFF! The recipe looks great, but in order to find out the amounts used it requires for you to pay a HEFTY FEE to join The New York Times! Disgusting! The NYTimes recipes should be removed from youtube!
