Loved the too brief travelog and the shortbread demo. I, at 80, still bake and follow a similar pattern to yours, with two variations: before baking, I prick out the eight wedges with a fork, which makes for easy dividing when cold, and place a half pecan on the base of each wedge. Sometimes, especially if I am giving away the whole wheel, I'll also impress a thistle in the centre with a round cookie press. Love all your posts; keep them coming!🙂

My Grandma Fraser used to gift us with the shortbread that she used to make and it was given to us in a tin. I absolutely loved getting the whole package which included her time, effort and Love ❤️ that went into it. I am at an age now, that this wonderful memory has now turned into a Beautiful Scottish Treasure! My Grandparents moved to Canada from Scotland many years ago. They actually did not know each other in Scotland, they met at a dance in Canada. My Grandfather was too shy to ask my Grandma to dance, so he asked his Brother to dance with her in order to break the ice. Your video today, has cracked this wonderful memory open for me and it reminds how for many years now, I’ve always wanted to visit Scotland. During our annual Farmers Market, April thru October, here in coastal Virginia, a lady of Scottish descent keeps a shortbread stall. Her beautifully embossed shortbread wheels are to die for! Now I can try making my own. Have a wonderful weekend, Nicholas!
Many years ago I was in Scotland. Along the way, my daughter and I stopped at a wayside and bought a block of shortbread. When I came back to the states, I did my best to recreate it, but it wasn't until I added a bit of rice flour to the mix that I achieved the texture of the Scottish shortbread we'd loved on our travels. Flour in the U.S. isn't like European flour - the texture is too fine. Suffice to say, I've made that shortbread many times over the years and your video brought back wonderful memories. Nicolas, always a pleasure to watch your videos. Give Sophie a pat - she's lovely!

During our annual Farmers Market, April thru October, here in coastal Virginia, a lady of Scottish descent keeps a shortbread stall. Her beautifully embossed shortbread wheels are to die for! Now I can try making my own. Have a wonderful weekend, Nicholas!

Many years ago I was in Scotland. Along the way, my daughter and I stopped at a wayside and bought a block of shortbread. When I came back to the states, I did my best to recreate it, but it wasn't until I added a bit of rice flour to the mix that I achieved the texture of the Scottish shortbread we'd loved on our travels. Flour in the U.S. isn't like European flour - the texture is too fine. Suffice to say, I've made that shortbread many times over the years and your video brought back wonderful memories. Nicolas, always a pleasure to watch your videos. Give Sophie a pat - she's lovely!
I use my NZ recipe book, and we use cornflour and icing sugar- the trouble is, I like to eat it!😂
