  • This video will show you how to make Corndogs and Corndog Puppies or Corn Bites as some call them.
    It's very easy and a lot of fun once you know the tricks to making them.
    One trick is to dry the hot dog. The other is to get the batter right.
    This video will show you how to do both. And if you read the recipe to the end, you'll find a sweet little surprise.
    I hope you find this corndog recipe to be easy and fun. We love a good corndog and I think my recipe is the best ever corndog recipe.
    CORNDOGS & CORN PUPPIES
    INGREDIENTS
    8 beef hot dogs
    8 Skewers
    Tall narrow glass
    1 Cup yellow cornmeal
    1 Cup all-purpose flour
    2 Tbsp. white sugar
    2 Tsp. baking powder
    1 1/2 Tsp. salt
    1/4 Tsp. cayenne pepper
    1 cup butter milk or whole milk plus 2 to 3 Tbsp. of milk for thinning
    1 jumbo egg
    2 Tbsp. canola oil
    3 Tbsp. honey
    1 quart Canola oil minimum in a medium sized Dutch oven.
    INSTRUCTIONS
    PREPARE THE OIL FIRST
    Use a medium sized Dutch oven. Make sure your corndogs will fit inside.
    Pour oil and get the temperature up to 350°F
    While your oil is heating up, continue to making the batter.
    MAKING THE BATTER
    Dry: In a large mixing bowl, mix together the cornmeal, corn flour, sugar, salt, and cayenne.
    Wet: In a smaller mixing bowl, mix together the milk, egg, oil, and honey.
    Now mix dry ingredients into the wet ingredients.
    The consistency needs to be a bit loose but not runny.
    PREPARE THE HOTDOGS
    Your hot dogs need to be cool or at room temperature.
    Dry dogs with a paper towel.
    Using 6” skewers, push skewers into the hotdogs at least three fourths the way through.
    Dip the dog into a glass of batter making sure to go all the way to the stick.
    With a slight twirling motion, pull the corndog out of the mix. If you see any spots that aren’t coated, push the corndog back into the mix again and repeat the swirl.
    To cook the corndogs, make sure your oil is at 350°F.
    Ease the corndog into the oil and allow the batter to become a light brown.
    Turn the corn dog in the oil to brown the opposite side.
    To make Corn Puppies, cut a hotdog into bite sized pieces.
    Stick toothpicks in each piece. Dredge each puppy in your cornmeal mix and fry for 3 minutes or until browned on both sides.
    Chef’s Notes:
    If you have batter left over, spoon a tablespoon of plain batter into the oil. Fry until golden brown. Remove and cool. Sprinkle powdered sugar on top and serve as beignets. You’ll be amazed how good this really is.
