One great thing about the variations you illustrate is that they seem to be melody driven and thus "musical" (we're always being told to "be musical"... yeah right)... but these show how.... that Night and Day piece ( I learned by memory as a one off) is an example where melody and the "bunch of chords" are so intertwined as to make good sense together. Many thanks....
One thing I don't mention is that Night and Day has the melody move down in parallel with the bass - in minor sevenths. So you could put that C pedal tone in the middle voice...
