      I have watched RuthAnn Zimmerman on homesteading with the Zimmerman‘s use the food meal and she said after you spin the food meal to the right six or seven times you have to spend it backwards to get the seeds to come out of the holes. I saw that you got frustrated with your food meal.
      I found you on RUclips a few weeks ago and I had to have surgery on my elbow and I have been watching you nonstop. I love all the goats.😊

    Thank you for filming this series! I think there are many people who think they're somehow "doing it wrong" when they have "small harvests" every day or every few days from their gardens. It is a little bit of a misunderstanding about determinate tomatoes, for example; The fruit sets and is ready to harvest within a short window compared to indeterminate tomatoes, but by no means is this over just a one or two week span in my experience. (We've had determinate tomato varieties that put on flushes that lasted several weeks, and rather than the plants being "done", they took a short break and started setting blooms again!) So I guess what I'm saying is that it's super helpful to see how you deal with the abundance in garden, farm, and sales in the season. But also how you sort of stumbled into another facet of garden management and that is realizing what your family may not utilize as much as you thought, since there were so many frozen peppers. BTW - I do wonder if the tomato paste (ground skins in the food processor) could have been made creamier by using your immersion blender once you added the liquid?

      Oh I bet you’re right about the immersion blender! It did essentially melt into the the ketchup great! We have had the exact same experience with determinate tomatoes, I want to grow more heatmaster determinites next year for sauce making.

      Our tomatoes come in bits and pieces too lol for the last week-10 days ours have started to ripen (hoping for more sunlight for the rest 😒). We keep them in the fridge until there’s enough to make sauce, which takes a few days.

    My son loves pear sauce. We have a young pear tree and are anxiously waiting for it to bear fruit. Last year I made ketchup for the first time, but I used grilled tomatoes, because I was doing a big batch of tomatoes for several projects. It ended up tasting like BBQ sauce, which was still good especially for meatloaf. Have a great day.

    I saw a gentleman who blended his frozen tomatoes (including skin) and poured the juice into a large glass container with a spigot in the bottom (like a tea jar). He let that sit and the water settled to the bottom where he poured it out and went onto jar the tomato paste that was left over. Easy peasy.

    Hello, I have a NORPRO sauce master food strainer. There are all sorts of similar products available. I love this machine I wash and cut tomatoes into 3-5 piece chunks. Run them through the machine the juice goes into one tray and the skin and seeds go into a separate tray. That is it. I cook down the juice and into the skin and seeds I add some olive oil and Italian spices fresh or store bought. Spread this onto dehydrator tray dry and grind into powder, which is amazing esp if you add some spices. I got rid of my food mill right after I bought this machine.       @@SageandStoneHomestead The screen in the box is perfect for tomatoes and there are other screens available 1 for berries and 1 for salsa these can be found for about $15 each. I have never gotten them as I have not needed them.

    If I’m wearing a hat for the day,it stays on until I finish up what in doing outside or inside. I’m not taking it off because my hair was a mess before I decided to put the hat on. Lol

    Loved this every bit counts series, Heather. Lots of ideas of how items are preserved and also used. Your pasta dinner looked yummy! I love pears, so I bet I would love the pearsauce. You mentioned using items to replace other things, and applesauce is a good replacement for oil too in some baked goods. I bet the pearsauce could do the same thing in some tasty sweet baked items. Really like how you made your own tomato paste using the leftover skins from making sauce. That's the essence of 'every bit counts' to me! Seeing the kids helping and also preserving their own, is so precious. You can tell they really enjoy it and that will be something they have with them as adults too. 💚🫑🍐🫑💚

    I’ve really enjoyed seeing all of your preserving through the month! I recently made sauce with meat and it turned out soooo yummy! I still have lots of tomatoes coming in so maybe I’ll try some ketchup. I thought it was a much longer process so didn’t want to try it until seeing this video. Thanks for sharing!!

    I have found a new favorite channel ! And believe me I watch plenty. I love how down to earth you are. Watching the other channels where everything looks perfect in their kitchen, or work area, or greenhouse, really has made me hold off on making videos in my own garden and kitchen. This is not meant as an insult AT ALL, it is meant for me to show my appreciation how you show how things REALLY look when you're working hard in your gardens and kitchen. My son would ask me, mom why don't you make long videos and I'd say, because my kitchen isn't set up perfect like the other youtubers. Thank you , I learned alot watching this one video !!

    I agree that pectin is a pain. I had to use almost a whole jar of it to make kumquat marmalade. But the end result was worth it. The ranch owners had a tree in their yard at their other property and brought me a whole box of them!

    Unless your bags of peppers were leaking, the moisture in the basket/bin they were in is condensation. Warm, moist air hits the frozen bags and condenses into water that drips into the basket/bin. It's water from the air. BTW you run the food mill clockwise for several turns then you run it counter clockwise to clean out the seeds. Then return to clockwise.

    I want to eat those dried tomato skins 😂 I can feel the crunch through the screen!
    I’ve been making sauce last week and this week because our harvest has been really late. I think I have around 6 8oz containers (we freeze because we don’t have canning equipment yet and plenty of freezer space) and I’m doing more later today 😂

    Using the mill, 3 cranks forward and 1 crank back to unclog. That also keeps the nut on the bottom from coming loose.

    Check out brew bags to get the water out of your tomatoes. Lot less time simmering down and it makes a real thick sauce

      I agree. We didn't love the salsas but the pickling packs are great and we do like the chilli base and now the ketchup! I bought the pizza sauce pack too.

    I heard if you do five turns to the right and then one turn the opposite direction. It’ll keep it cleaned out so it doesn’t get clogged. That was from Ruth Ann Zimmerman. She has a RUclips channel too and it’s great.

    An idea to get your pear jam to set...add a couple of granny smiths apples per 8 cups of pear sauce. Y I u still might need a packet of pectin, but you shouldn't need more than that.

    When I use my food mill, I put fewer tomatoes in it, and when the holes get clogged, turn the handle backwards and scrape it out and discard that. Still kind of slow

    Heather thank you so much for this video! So encouraging and so informative and it is such a joy to watch your videos and let my brain explode with so much that can be done even more so than what I'm doing now lol. Does that make sense? Going to try and get myself a food mill. Eventually we'll be heading up North with my sister and brother-in-law and will be living off-grid and that will come in handy. Along with a hand grinder for dried corn. I already have a grinder for meat....
    I'm sure you mentioned this in another video but what is that little Contraption you use to remove the air from the jars?? I already placed an order for my food mill LOL

    Yeah you did the Mrs wages ketchup. I’m glad you enjoyed the taste. I’ve made homemade ketchup before but the fam didn’t particularly care for the flavor. I have a packet of Mrs wages ready to go. I think I will slowly add t to my store bought ketchup to integrate the fam into it.

    Sometimes life is overwhelming! And sometimes all we can do is what we can do and that might not be perfect but it is what it is. You probably could sort the pears and cut out the bad spots and make more pearsauce; I like mine with nutmeg and ginger whereas I put cinnamon in applesauce. I'd love to have a freeze drier but I have no space in my house to put something that big. lol. Yep the milk just keeps coming and coming and coming 😂 I used to do a lot of canning and drying but now I live all by myself so my garden goals have changed from trying to can up as much as possible for a family to can I eat fresh from the garden every day/ With a few things preserved like pickles, some convenience items like jars of broth for soup base and such and of course meat and cheese in the freezer. Since I sell at the farmers market I rarely have enough tomatoes to preserve and mostly just eat up the bug damaged ones before they go bad.

    @30:00 u can definitely let a couple of people in ( like one family ) and tell them to pick whatever amount of cherry tomatoes they want for 30 minutes. For 15 or 20 dollars
    I bet u will find someone local who will take advantage of this amazing deal ❤ and since they are only one family it will be easy to check whenever they are there and done

      Our kids are doing it though? The farm is theirs first for sure. We don't farm for profit we farm to feed our family and the volunteer tomatoes are bonus food. It's important to come to grips with things going back to the land not being wasted. The tomatoes that fall feed the earthworms and benefit our farm. Alternatively we could use the $15 to buy fertilizer or spend the time toting manure around but why when the tomatoes are taking care of things themselves? Letting systems like this play out saves a ton of effort and makes other projects manageable without burnout.

    We go through A LOT of bell peppers and onions in my house. What you freeze dried, id use up probably in two months. Being from Louisiana we cook many things that we put bell peppers in its so crazy how much we use of that. I heard you mention in prior videos that you have a lot of tomatoes stored up from “”heat master” variety…I am growing those now what size are they supposed to be in full size? Mine are just starting to put on fruit and they aren’t very big at all. Thanks God Bless

    I’m dying to know what the Amish folk made of the freeze dried pears! Did they taste them while you were there?

      They were super busy that night but the store owner tried it and his face puckered!! The flavor is quite shocking if you are not expecting it. It's a good punch of flavor!!

    when using the food mill for anything that has skins and seeds you have to spin it in the opposite direction when the whole starts getting clogged and it will scape it clean

      I did that and when I resumed the other direction the seeds went right back into the holes

    Every six or eight turns around with the tomato stuff in it, turn it backwards a couple of turns to scrape up the seeds off the bottom. That should release it enough so that you can go forward again. You have to keep doing it throughout though.

      It didn't work for me. I did that and they slipped right back into the holes when I resumed the correct direction. Very fussy!

    You haven't gone backwards to scrap seed and sklns from the bottom and then go forward five times then backwards

      This did not work for me well enough to keep doing it. The seeds filed right back into the holes on the first pass
