My cousin was a baker at Levain in mid 2000s. We had the cookies almost every day lol. We went on a bakery tours when we were at Seoul. Korean bakeries are definitely creative. The levain cookie copycats were just perfect. Not too sweet unlike the original version and goest well with tea. Also, i LOVE their take on french pastries. The stuffed croissants are a must try!
Im confused. Why do they not just pour the flour into the mixer right after the butter/hazelnut/eggs are mixed? Why do they weigh the cookie dough even though they are not adjusting the weight after they weigh them?
as a baker . I guest use mixer sometime make cookies much harder texture . I also like hand mix . second if you baker everyday , you can feel the weight , they weigh the cookie dough just because they want 100% sure
