Low Sodium Chicken & Beef Flavoured Bouillon & Old Bay Seasoning Mixes (vegan)

  • Low Sodium Chicken Flavour Bouillon Mix (vegan)
    1 cup nutritional yeast (not baking yeast)
    3 tbsp onion powder
    3 tbsp garlic powder
    2 tbsp dried parsley
    2 tbsp ground celery seed
    1/2 cup Italian seasoning
    1/4 cup poultry seasoning
    2 tbsp potato flakes (if you can’t find this you can leave it out)
    Blitz in food processor or blender and store in an air tight container.
    Low Sodium Beef Flavour Bouillon Mix (vegan)
    1/2 cup nutritional yeast (not baking yeast)
    1/2 cup mustard powder
    4 tbsp onion powder
    4 tbsp garlic powder
    6 tbsp smoked paprika
    1 tbsp ground celery seed
    2 tbsp mushroom powder
    1 tbsp chil powder
    4 bay leaves
    2 tbsp potato flakes (if you can’t find this you can leave it out)
    Blitz in food processor or blender and store in an air tight container.
    Low Sodium Old Bay Seasoning Mix
    1 tbsp celery seed
    4 bay leaves
    1 tbsp mustard powder
    3 tsp sweet paprika
    2 tsp ground pepper
    1/4 tsp nutmeg
    1/4 tsp ground cinnamon
    1/8 tsp chile powder
    1/8 tsp allspice
    1/2 tsp chili flakes (optional)
    Blitz in small food processor and store in an air tight container.

    Mushroom powder could also be found in farmers' markets. I was able to buy from the Duncan Farmers market. There's a lady that sells varieties of wild mushrooms. I think in most Farmers markets in BC.

    Great seasoning ideas; thanks! Celery leaves, dried, are a great substitute for celery seed & very easy to do in a low oven or dehydrator. I didn’t know we could consume Bay leaves! Blessings to all 🤗🇨🇦

    Yes I use Old Bay Seasoning on a lot of things. Great spice for any type of seafood.
    I buy bulk at WinCo and HEB but they are limited. Need to take your list and see.

    Great bouillon recipes, but dried bay leaves might be stubborn to grind down. I would snip the center stems off and then put them through a mortar and pestle, and then finally adding them to the mix.

    Thanks so much for these great pantry stables. I agree that when reading these ingredients it has too much salt. Then you have to mindful of other ingredients that you may have allergic reactions to. I can't have cinnamon, MSG, and allspice. We have a store in town that sells spices in bulk I'll go there and get all the ingredients. Have a great day and 💕😺! 🤟🖖👋

      I don't know your reason for needing to avoid MSG, but it gives me migraines and unfortunately so does yeast extract and nutritional yeast. Nutritional yeast is ubiquitous in vegan and WFPB recipes and I don't know of any acceptable substitute. I have to just leave it out and have less flavor.

    I buy Bob's Red Mill potato flakes from the organic aisle of my grocery store. The only ingredient is dehydrated potatoes. They are Vegan and non GMO.

      These are great recipes Adelina. What an intriguing idea! Thanks for sharing them. A tip I have for buying larger amounts of spices is to check out the international aisle at Superstore. You get larger amounts for cheaper. I think they come from India. The bulk barn is wonderful too, like you say, when you need really large amounts of things. It's always great fun to watch you drink your coffee and cook and to watch Sophie as she always makes a grand little or big appearance!! 😊❤Sue

    Thanks for sharing Adelina! I wrote out all the ingredients. I wanted to ask you, where there's cinnamon and nutmeg, and allspice, do you taste them in a recipe?
    Also I wanted to share in case you didn't know, have you ever tried pink Himalayan salt? Or what's called Real Salt? It has all the minerals in it that are actually stripped from the white table salt ..much better for you .

      Hi. I don't tally them specifically. Those spices are in the traditional Old Bay seasoning. I've tried that type of salt but the sodium is still not good for my blood pressure.

    Dollar Tree or Dollar Rama have you seen the rubber broom heads with short rubber bristles? So good for removing pet hair from your rugs and carpet. fyi.

    Thank you Adelina,this is great.I use bouillon cubes and they are expensive.Was wondering if you could just use potato starch instead of the flakes ??Also I make my own mushroom powder with the dried shitake mushrooms you can get in the Asian section of most grocery stores.I just grind them up.

    These look like great recipes. I can't use vegetarian or vegan bouillon that's premade at store since it usually contain ingredients that my husband is sensitive/ allergic to, soy, cornstarch etc. I can't wait to try them. Can you tell me how much of bouillon to use per 1 cup of water to make a broth?
    Ps I got a set of the oblong measuring spoon and love them. They fit in the spice jars so it makes everything easy peasy.

      Hi! I'd start with 1 tbsp per cup. Keep in mind that because there's no added salt it will taste different than the store bought. But then, that's the point I suppose 🤷🏻‍♀️😁

    I find stock from the store either too salty or has a weird flavor so will try this. How much do you use to make a cup of stock?

      I'd start with a tablespoon. You can always add more. And then add salt to your taste.

    Nuts! I just checked the ingredients in Vegeta, my go-to broth powder - 1 tsp = 30% of RDA sodium. 😢

    I don't eat vegan as giving up meat is a big sacrifice
