      And if you don't... The fun thing is seco is the word for dry which seco is NOT. But the Spanish didn't want hot soup. They just wanted the second dish. Viola seco!

      "Seco" is a a very old peruvian cooking technique. It is like preparing a stew (guiso) , but drier. Seco = dry in spanish. This cooking technique comes from cultural heritage. Seco de Carne , Seco de Cabrito, etc. Ecuador also has some newer dishes based on this technique as Seco de Chivo about 100 years old, similar to Seco de Cabrito, but different ingredients. So it is 2 different dishes prepared with the same cooking technique

    I think the most surprising thing to us is people not having to pay their water bills over the (example: seller owed over $300 on water) years and not get cut off and that property taxes are not mandatory if the house is not considered completely built or sell.
    To me, it just seems to stall the progression or stability of necessary improvements, such as electricity, safe roads, sanitary systems, water access, etc.
    We love it here but see some things that could be reviewed.
    To add to this, the permanent Visa process is quite a ride.

      Not paying water bills, electricity bills, cellphone or internet bills for about 2 or 3 months, is enough reason to cut the services off in Peru. Paying taxes for our property is mandatory in Peru too. If the owner did not pay taxes to CIty Hall cannot sell his/her property. Notary is very strict in Peru in this matter. Paying taxes on our property is mandatory , no matter if the house is been completed or not. Not paying services on-time caused lack of good quality services and lack of improvements in the infrastructure itself. It began to gradually change in Peru 30 years ago since the 90's

      Public and Private services companies are supervised by specialized governamental institutions in Peru. In case of Petroleum and Electricity companies by OSINERGMIN. Communication companies as Claro , Entel, Movistar by OSIPTEL. These offices has forced peruvian and international investors to offer best possible quality services. Peru actually has 1° world class services at 3° world class prices

      @@jamielivingston7765 No because I drew up a contract which included all debts to be cleared against the property by the current owner before payment was received for the change of ownership and payment of the house then it was taken to the Notario to notarize it.
      Honestly, the lawyer I used had to follow my lead and I constantly had to handhold him but in the end the property was transferred without issue and I was able to put only my name on it without my husband's because we are not citizens of Ecuador.

    They are called walking tacos in the US. Either fritos or doritos with taco toppings in the bag.

      YESSS FINALLY! I’ve been wondering what to call them so I’ve just called them “tacos in a bag” 😂
      They’re done a bit differently since I’ve seen that some places use Doritos and others don’t (Fritos don’t exist here) but I’m glad to know the name (I might still call them tacos in a bag while I get used to walking tacos).

    Favourite food, soup with Ahi, secco do chicken, pork, beef or shrimp, hornado, pinches, empanadas, and brujo fish is my favourite but is very coastal and not available everywhere.

    Gm Ace Gm Ace a suggestion, you talk a lot before you drop the question, you should be faster to ask and not give too much thought to the question, you talk too much friend, almost the whole video was about you, your prologue before you drop the question, you should improve that

      I know I talk quite a bit, sometimes it’s a blessing while other times it’s a curse lol
      I’ve always thought that it’s better to give your own feedback so that it doesn’t feel like you’re only relying on the person, kinda like “if I only gonna ask the questions, couldn’t they have done this video themselves?” I don’t know, it just feels lazy on my part if I don’t give my input. That’s just my personal opinion of course and maybe the norm is to just do that. That being said, I will look towards giving less input since it would also feel bad if my guest felt that I invited them only to make them feel like I tried to make it about me and didn’t give them a chance to speak. That’s never the intention, I just sometimes have so much to say. Maybe I should think that I’m on a timer so that my input is more scaled down.
