    Mutton Paya Curry
    Mutton paya curry is a slow cooked spicy and delicious curry made with lamb trotters served hot with tandoori naan, roti, or rice.
    Ingredients:
    * 2kg mutton trotters/ payas (cut into small pieces)
    * 2 medium sized onions (finely chopped)
    * 1 large garlic bulb (finely chopped)
    * 1 tin chopped tomatoes (optional you can always add yogurt instead)
    * 1 litre water (approximately)
    * 1/4 cup oil
    Whole spices:
    * 1 teaspoon black peppercorns
    * 7 cloves
    * 2 cinnamon sticks
    * 2 black cardamoms
    * 2-3 bay leaves
    Ground species:
    * 1.5 teaspoons salt
    * 1/2 teaspoon red chili powder
    * 1/2 tablespoon turmeric powder
    * 1 teaspoon crushed chilli flakes
    * 1.5 teaspoons coriander powder
    * 1.5 tablespoons cumin powder
    * 1.5 teaspoons dry fenugreek leaves (methi)
    Method:
    Step 1-
    Wash the payas in really hot water few times scrub them really well. Better to burn them on an open fire to get rid of any hair.
    Step 2-
    Add them in a pressure cooker or instant pot with all the spices listed above and water except the oil. Pressure cook for 45-60 minutes on medium low heat or until payas are really soft and coming off the bones.
    Step 3-
    When payas are done add oil and bhun/ sauté them on medium high heat for 5 minutes. Add half cup of water, quantity depends on how thick or thin gravy you want. Cook on low heat for 10 minutes.
    Garnish with thinly sliced ginger and fresh coriander leaves.
    Serve hot with naan bread or roti - enjoy ☺️
