This is so cool, I had no idea that this could be done. I have some diabetic family members who cant eat the cake mix cookies that I usually make. This looks like a great alterative. I found you by doing cake mix cookie research, and I'm so glad I did. Thank you for sharing

Just made these after a from scratch recipe turned out bad, these are amazing! I used almond extract instead of lemon and they hit the spot! Great Christmas “sugar” cookies in a pinch, happy holidays!

You can find the cake mixes on Amazon, but Walmart and Meijer carry it and they are much more affordable. The stores here run out quite fast, so I buy 8-10 boxes at a time. That lasts me about three or four months :)

Hi. I was so excited to make these for my husband. But, for some reason my cookies did not spread. I even flattened the second batch. Help!

Could you use unsweetened applesauce, or another ingredient in place of the oil?

Is there any way that you can make gooey butter cake with that cake mix just tweaking things a little do you have a recipe for gooey butter cakes please let me know

Joy, I typically make gooey butter cakes by adding cream cheese. This recipe would probably call for 6 to 8 ounces of cream cheese to work. I have a recipe I can share if you wish. Even better, would you like to see a video on it? Thanks for the question and you rock.

I just checked out the Vanilla Bean paste you used in this video and was disappointed to learn that the first ingredient is SUGAR....

First, thanks for the comment. I get the sugar concern however, considering how little you use of the paste, and the other adaptations to make this and our other recipes low carb and virtually sugar free, its a great choice and so much better than extract. Thanks again and be safe!

Hi try Molasses and beet root, that is what we use in our organic drops, so each drop has about 1.5% sugar but it is all natural.. just fyi DCoats.

Yes, this is not a low carb food. I have the nutritional comparisons and details at the end of my video, along with impacts to my blood sugar. This is a standard practice for all my recipe adaptations and commercial product reviews. Thanks so much for the comment and question.

I thought I could make these cookies with Pillsbury's Gluten-Free cake mix, but can't have the lemon extract, so will have to use another flavor. I also can't have alcohol type sugars as they aren't low fodmap, so I wouldn't be able to eat the Pillsbury Sugar Free Cake mix. If only they made it with stevia! sigh! 👩‍🍳🍪
