They need a double coating of flour to become crispier during frying. But make sure flour is not too much. Shake them well to remove excess flour on both coating times.
That is very weird, because I have done them many times. Two things I can think of: Either the oil was not hot enough or you have tried to fry too many zucchini sticks at the same time which brought the oil temperature down

I haven't tried to add the "secret ingredient" to coat small fish. They usually turn out pretty crispy by mixing 2 flours
