I am really excited for this restaurant, this type of fusion cuisine and even the cool culturally significant name its been given. But I can't get over why politics needed to be placed into this kind of a subject. Reading about "Chinese and Taiwanese" food is like talking about American and Californian food or US and Hawaiian food. The only reason terms exist like this is because of politics so it has no place in a video or an article about Chinese cooking for Christ's sake. It made an otherwise great idea into a painful reminder of the shape the "free world" is in.
There is no politics here, Taiwan is only mentioned because that is where those dishes came from. Boba drinks were invented in Taiwan and that club-style sandwich too. No religion is involved, freedom allows for fusion.
I don't think the distinction of Chinese and Taiwanese food are intended to be a political statement. Regardless of your stance on CN/TW, when you go to Taiwan, you don't say you're going to China. I think it's really just meant to represent the region and origin of the dish.
