Hopefully, this recipe still reflects how these little pastries are made today! As for the butterie croissants, they actually do taste different considering they are made in very similar ways. Butteries have a more hearty rustic texture from traditional French croissants. However, I love the fact that butteries can be made in well under half the time! You are completely right! My grandmother's original recipe called for a half and half mixture of butter and lard. But to make this recipe more accessible to modern home cooks, I thought to go with butter. Thanks for sharing!
