Bacalao is cod. Cod is not even found in the mediterranean. Cod caught in NORWAY is dried and salted. The Portuguese specialised in this fish in the seafaring days, it being the perfect form of having food stored. The Italians do have their version, as all mediterranean countries have. But, Bacalao is NOT Italian!
We have the same in Greece, the fish does come from Norway as you said. We call it Bakaliaros and we eat with skordalia which is a potato puree with lots of garlic lemon and vinegar, or savori which is a garlic tomato sweet sauce that makes a sweet and sour effect . We fry it exactly the same way, and extra virgin olive oil makes it so amazingly unique.
oregano, parsley, black pepper, garlic powder. (i'd go for 1/2 tsp salt),,,, and What?? is this red pepper flakes,,,that was never on our table. we are from Campagnia region. DId you family use red peppers in italy?? Could you explain,,,,, i don't cook with hot peppers. Grazie
