Ryan's laugh when the leaf landed is so wholesome lol
I agree! The part at the very end, his laugh. 😄
@@naomivanharn2300 Right !
Talent and a love of life!
a perfect leaf fall for a perfect fall video.
OMG Townsend emoji??
ryans laugh at the leaf falling at THE perfect moment was super charming. y'all all seem to love what y'all are doing. look forward to the next wonderful video!
10:57 -- So cute!
@@TheNaturalMtDew Ryan is so cute LOL
It's funny when you are stuck watching commercials of modern day luxuries just before you watch Townsends.
Same here. Lol.
a luxury back then were books
I dont have the option for much tv or internet based streaming. Luckily what I could spend on that brings me youtube plus so I can listen on my headphones during farm chores
Yep. I got a Maybelline ad.
I got a Mercari ad to buy luxury handbags...
Jon said that Ivy was working on socializing the chickens… Good work Ivy! I loved that part. 🥰 🐓
Socialised all the way to Ryan's stomach!
@@Martial-Mat It's the "way to a man's heart" after all, cant socialize more than that! xD
@@MrBigCookieCrumble 😁
I just love Ryan's laugh. First then leaf then the chicken. 🤣 Not only does he bring some unique recipes to the channel but he has a great sense of humor. One thing I would like to add about leaving the bones in is you are getting that extra nutrition. There are a lot of nutrients in the bones that come out in the juices. There is a reason bone broth is making a comeback. 😉
I imagine also that one person pulling the bones out of their cooked chicken serving would be much easier than someone cutting the bones out of the whole pie's-worth of raw chicken.
When cooking black beans, my family would put in pork bone for the extra flavor. So yeah. lol
In El Salvador my relatives still use this type of oven for baked goods. It’s very cool to see
You can tell Ryan is such a nice guy and I really like when he does video's. All the video's presenters are like your best friends.
Other's talking about communal ovens reminded me of something my grandfather told me. Back when he was a kid in the 20s (He was born 1917) the local baker would have his oven going almost all week long making breads and pies. Back in those days none of the shops were open on Sunday so Saturday night when the baker's oven was shut off and allowed to cool down, people all over the neighborhoods would bring their bean pots full of beans and give them to the baker to put in his oven. Early the next day people came to pick up their bean pots and they would have beans with their Sunday dinners. The beans had simmered all night long in the residual heat of the oven. That last amount of heat was not wasted and fed many people.
This was in Woonsocket R.I. in the French area of town.
He doesn't just play a role- he lives and practices it! Excellent vid.
I think people back then were a lot more active than this guy.
@@dboboc he may have fat but that dude looks mostly muscle. Back in the 1600-1700s, the more fat you had the more likely you were to survive winter.
Milk Street had a recent episode that showed a communal bread baking oven in Morocco. Incredible to see that old fashioned technology still used in the modern era!
We still have pizza ovens and Mexican ovens. I guess it's similar
No clue who that is
Anyone else wanna see the crew cook up an 18th-Century pizza in that oven?
That would actually work, since pizza was developed in Naples at around that time. They should totally find an early recipe for it.
focaccia
The unleavened flatbread version is ancient.
they did
It was terrible
we need more videos with ryan, really enjoy the way he explains things
Finally, a chef I can trust
Haha. Never trust a thin chef!
@@ActionableFreedom amen!
@@ActionableFreedom That aside it seems he is losing weight. Which always a good things of course. Not offense intended to anyone
@@swaggernautilus3891 If someone is offended by the idea of another person getting healthier, that's their problem for not being able to celebrate another's progress towards being a better version of themselves.
Had a family friend who was a professional chef that said never trust a thin chef unless they have a fat husband. Her advice has been really solid lol.
This was so relaxing. I like that Ryan is encouraging about us working with pie crusts. I also like that you kept the leaf laugh and the chicken outtake at the end. You rock!
That falling leaf 🍁 on the chicken pie was indeed a good sign that it’s a great savory pie for the season 😄 And the little hen knew it too!
Always enjoy these earthen oven videos - very interesting and the pie looks excellent
Oh my gosh, the leaf and the chicken had me rolling! All that aside, this looked delicious!! Love watching Ryan cook - you can see and hear the passion he has for it!!
Ryan always does an amazing job. That chicken pie looked so good!
I'm glad you left in the leaf and the Chicken. Delightful. :)
The leaf falling on the pie was just perfection!
This was a fantastic video. I want one of those ovens outside my place. Thank you Ryan for alleviating my issues with making pie crust, you sounded like a friend. This was one of my favorite vids on the channel thank you again!
I usually hate cooking shows but your channel has always been enjoyable to view the cooking episodes of. A lot of them remind me of food the older people used to make in Nova Scotia, PEI, and New Brunswick; before McDonalds sort of thing took over. These older dishes have a lot more flavours to them. You've got me remembering those foods and wanting to try some of your recipes on here.
I'm on the same page. The worst is that I find it very difficult to articulate why I like this show but not the others.
Perhaps because the main topic isn't just food but the historical discovery. Perhaps because the hosts are so delightfully modest and humble.
Ryan video? Instant watch
This was good with the leaves 🍃 plus the chicken was the star.
I wish I could like this twice. Great video
My favorite part of this was the leaf falling, and the chicken jumping up on the table. The chicken took me back about 20 years, to a little restaurant in Mexico, where I had the same thing happen. 😅
Now I want chicken pot pie!
So did that chicken at the end!
A very satisfying looking dish for the autumn season. That pie does look good. I like how that oven turned out. This channel is awesome. Cheers!
Great video!! Video bombed by a leaf AND a chicken. Couldn't get more 18th century!
I like the 3-2-1 method of pie crust. Ratios are better than amounts when baking! Love the leaf!
Beautiful mouthwatering video! (But the outtake with the chicken was also hilarious)
That chicken at the end wants to know what you did with her people. 😂 The laughter was infectious! I moved south because winters made my depression worse, but I *really* miss autumn!
And also maybe have a taste. She didn't want to make the sacrifice of her people be in vain.
If that chicken develops a sense of revenge, Ryan is going to have a powerful enemy.
EXCELLENT presentation and speaking. Clear, concise, confident.
I'm convinced that the origin of the word "umami" was someone tasting some food and saying, "Oooooh mommy, this tastes good!"
When I was a kid, everyone was always telling me to shove it in my pie-hole.
Now I finally understand they were giving me helpful recipe tips. Thanks, Townsends!
Thank you for sharing another earthen oven video! 🤩
Great, genuine video. Love the bloopers.
I don't have an earthen oven, nor place to build one. I live in a tiny apartment, and no yard to speak of. I am so glad you include modern ways to cook the recipes! I would like to suggest you watch a few videos of "Learn Your Land", as he had lots of videos about wild foods you might enjoy. I am not allowed to drive due to seizures, so don't have access to wild lands (aka state parks, friends wild lands, etc). I am sure some of the wild foods he talks about are as historic as you could want. The one wild food I have access to is dandelions, and I am looking forward to including them into my diet when they next grow in the lawn of the apartment complex.
Be careful if they treat the lawn.
Dandelion blossoms are great! Slightly sweet, and high in vitamin C. I find you need to pull off as much of the green bit below the petals as possible, as that and the stems are rather bitter. I’ve not tried eating the leaves, which I am told are best before the plant flowers, after which they get bitter as well.
If you have dandelions growing, you may also have other nearby edible "weeds," such as purslane, wood sorrel, lamb's quarter, and purple dead nettle. All of those grow in front of my apt, so I hope you have similar options. 😃☘️🌿
Edited to add: But my complex doesn't treat the "lawns" (overly generous term, here) with any chemicals of any kind.
Hope you can find access to some of those wild edibles.
You can absolutely not eat anything grown in a lawn like that. Full of pesticides. Same reason foragers that are educated do not eat anything growing within ~15 feet of the side of the road. You might as well put Roundup in a spray bottle and apply it to your salad as a dressing if you are eating dandelions from an apartment lawn.
As I am writing this, I am feeling a bit under the weather. This video is so wholesome it actually made me perk up, just watching you cook. Thank you so much!
The leaf falling right on his precious pie at the perfect time of reviewing and enjoying it is priceless xDD I love your laugh and your cooking, please keep it up! much love
love that Ryan's starting to find his style, great video
The chicken came in for revenge for her kin! Great video. Thanks for sharing this with us.
Love these Ryan cooking episodes
This looks delicious. And I really like how you used herbs that were dried on site! I'm wondering now what it might taste like if we were to use a bit of white wine when cooking our mushrooms instead of water?
That sounds like an excellent idea.
@@essaboselin5252 Have you ever seen their Mushrumps episode featuring Michael Dragoo? Cream and sack were both used. And it looks fabulous!
I think it would taste really good. Cheers, Rose!
"It is delicious, but there is something missing.... something to give it a nice, oaky Earthy flavor..."
*oak leaf falls into pie*
"Thank you, Lord!"
🤣
I love John Townsend, but my friend, you are an extraordinary teacher. I can’t pick a favorite.
Looking forward to more autumn themed videos
Woohoo! New townsends upload, my day just got way better
Great video Ryan. Thx for the extra humor! Nice of you to explain why you left the bones in. That puzzled me when you were assembling the pie. Always a fun video when you and Jon are cooking or baking. Thx for all you guys do to preserve and remember our past. I expect these will be part of a documentary or history class at some point in the future.
Yeah I'm glad he explained that. I've seen that several times and I was just like, "what on earth." lol
I love Ryan's videos he has such a wonderful camera presence
You've been visited by the lucky chicken. 😆
I love a good pot pie, and this looks great. I don't eat meat so lots of veggies and mushrooms would work; I think it would be just as yummy. Thank you for sharing!
Great idea! This recipe really does look versatile from a standpoint of ingredients. My guess is that you could easily switch out a few of the ingredients and perhaps bake it in a standard oven if there is no earthen oven available to you, as well. And I bet that even some vegans could change up this recipe to suit their dietary choices nicely.
This stove reminds me of my the oven at my grandparents house.....I can smell the chicken through the video!
That pie was so good that the chicken at the end didn't mind eating his own frend . Great video always find you videos very cosy and happy
Oh yeah, chickens are unrepentant cannibals. You didnt even need to cook the chicken - they'd eat it anyways.
@@Your-Least-Favorite-Stranger yes chickens are crazy with what they eat one of my chicken's ones eaten a mouse all at once
OMG the chicken and leaf were just perfect ❣️
Great episode as always 👏🏻
Thank you for explaining the steps. I rewatched all the earthen oven episodes just a few days ago, and right about the time i wondered why you didn't mop out the ash residue, you explained. :)
watching this while im eating my dollar store chicken pot pie.
I'd love to build an earthen oven. If I ever manage to buy a house with a decent yard that will definitely be one of the first projects.
Ryan, I really like when you do videos. I appreciate the nuance and explanations for little details. Thank you both for this channel. I've learned a TON.
Great job Ryan. Bet that would be a great recipe with some curry seasoning too!
I bought a piece of land this summer where I'm going to build a log cabin (a modern swedish one) and there's DEFINITLY going to be one of these ovens!
Something about a large, bespectacled man teaching you to cook is really, REALLY cool. Thanks!
I can't wait to see the smokehouse build! Cold and/or hot smokehouse?
Ryan you have a wonderful charisma that continues to blossom. I'm so happy you've also joined the presentation team. You're a Wonder addition to this channel.
Be as happy with things as simple as a falling leaf on a perfect pie like this guy.
Just what I needed after a trying day. Thanks!!
Thank you for another great video Ryan!
This man makes me happy. Love every second of content out this channel. Still doesn't feel like enough nutmeg but that's alright by me, for now.
Ryan, you do a great job explaining everything so effortlessly. Your passion for this stuff really comes through. Great video. Also, it is so awesome to me to see people making recipes from the 17th century. I wonder if the authors ever thought their words would be used centuries later for the world to see. Such a cool concept.
Good afternoon from Syracuse NY everyone thank you for sharing your live history videos
Lovely show, Ryan is awesome as always! Big thanks from a swedish fan
Man that looks good, best thing ever to eat on a cold day like this
What a beautiful video. The leaf at the end ties it up too wholesomely.
Omg the chicken
THANK YOU RYAN for a fine presentation, filled with plenty of tips about using thermal mass ovens.
Always appreciate coming home and watching one of y'all's videos after work!
Looks wonderful! I haven't made chicken pot pie in ages. I think I would miss the vegetables in that one, though, along with some sage, thyme, and garlic. Maybe one day I'll build on oven but that's a lot of clay to come up with in a suburban backyard.
You know what I've been meaning to ask if you can do a vid on baking a cake in your oven.
Lovely chickens! Nice little blooper with the chicken at the end!🐔
You can never go wrong with chicken and mushrooms. This sounds amazing.
This channel is the best. First time seeing him on here and he’s got great energy
raking out the coals and ash. in dutch there is a saying : "iets in de doofpot stoppen"
the doofpot is a large the large container in front of the oven (into witch you put the coals and ash) with a tight fitting lid to smother it.
the saying means to not mansion wrong doings and smother any rumors about it. sometimes this was accompanied by putting a small object (a token or something stolen) in the pot to bury it in hot ash.
Always great to see a Townsends video! Keep up the good content.
Great video! Love the presentation and the pacing. More of these, please!!!!! Bravo, Ryan.
I like watching videos with you Ryan. You do a lot better than I did when I tell people how to cook XD
Best pizza i ever ate was cooked in a wood fired brick oven, with the fire still going on in the oven! They just scraped the fire (mainly coals at this point) off to one side, pizza went in right on the brick on the other side. Of course they were cooking sans door, and the door was fairly large, so i imagine that's why they needed to keep the fire going, so that they could keep the heat levels up.
This was in Italy, where i simultaneously (well, same visit) had the best and worst Italian cooking i have ever eaten.
Ryan, you are a delight to watch. Thank you so much!
This is by far the most beautiful channel I've ever seen ❤ Thank You.
I have been a long time viewer but I rarely comment. I absolutely loved this video. I just want to say that i have absolutely enjoyed watching the channel evolve over the years! I absolutely love the cooking videos and it makes me long for when I used to be a medieval times reenactor, but I am absolutely loving the evolution and learning more than just cooking!
I know you guys have talked about it a bunch of times but would love to watch an episode on maximizing the use of an earth oven
🍁 And cue the leaf... right when Ryan talks about fall, lol. 🤣😂
Such a great job, Ryan. I love meats cooked with the bones in it! God Bless and stay safe.
Bone in meat always tastes better to me thats for sure. Your know whats good my friend.
What a great recipe! So simple but satisfying for fall flavors - well done, Ryan and Townsends!
Ryan absolutely nailed it being the host.
One day I will convince my wife do build one of these with me. Everything made in them looks so good!
Ryan's speechless expression when he tastes the pie for the first time... that's how you know this is a great dish! Loved this video.
Finally this guy- he’s always in the background
This video was a delight. From learning more about cooking in the earthen oven (sadly I cannot re-create one in my apartment) to the fact that cooking the chicken bone-in gets you the loveliness of flavor (like making a bone broth), to the leaf and Ryan's laugh (and the chicken! (well, they are cannabalistic) oh my!). The beauty of fall in the background. This video brought me amazing warmth. Thank you.
This was one of my favorite episodes ever. Ryan's confidence in pie crust is amazing
Looks Yum.😋 Leaves & Chickens, I was waiting for a Goat to get up on the Table next.
TFS, & take care everyone. ❤🙂🐶
Ryannnnnnn!!!!!! Maybe I've been too spoiled on John but I think Ryan is my new favorite. 😂 Even mother nature agreed!!!
I love when Ryan cooks!
