- Ya'll know I'm all about the ingredients and KNOWING what's in my food. For that reason, I make my own seasoning blends & this one is a favorite. I never buy seasoned pork, I only buy ground pork & season it myself.

Use 1.5 - 2 T per pound of ground pork
1 T fennel seeds, minced
1 T dried basil
1 T dried oregano
1 T garlic powder
1 T dried parsley
1½ tsp onion powder
1½ tsp dried rosemary
1½ tsp black pepper
¼ tsp red pepper flakes
Always make my own blends. Even have a garbage blend, which is like when I make seasoning for something and have leftovers, I just mix it with the last leftovers, it gives me an ever evolving seasoning, and honestly it's really freaking good. So much has made it's way in there over the months and melded together you can't identify any single spice or herb, it's kinda of taken on its own unique taste, that's more than the sum of its parts. I find it fantastic on meat. But it's pretty good on roasted or grilled veg as well.
I toast the fennel, pepper, and rosemary in a cast iron pan for a minute until fragrant. The flavors are really enhanced when slightly heated and start to release those aromatics then add right into the meat and it makes a world of difference. I also add milk powder or butter powder as a binder for sausages especially if im casing and throwing on the smoker. Also, use
Heavy cream as your liquid when mixing your sausage! Makes the best brats, summer sausage!

I tried this seasoning mix with ground beef and then added marinara sauce for an awesome spaghetti sauce. I’ve made it several times now. My son loves it. Btw, I just eyeball how much I add to 1 lb of ground meat. When it looks like a lot that’s when I stop. 😂

That looks like about 6oz I think. You could make about 8lbs of sausage with that I think so about 30 links give or take. Correct?
You know I haven't weighed or measured it. I just make it, use it & make more when needed! : ) I use 2 T per pound of ground pork which I failed to mention. Ugh! I haven't ventured into making my own sausage links although that is a place I want to go for sure!
how many pounds of ground beef can be used ???? just i want to try it for making sausage jerky
I was thinking she might be using 1Lb meat for the Tbsp & a half she mentioned.
One pound of ground pork, chicken or beef works great.
So, how much meat will that amount season? And, why not just put the ingredients in the jar as you measure them and then just shake them up?
You absolutely could put all the herbs and spices in the jar & give it a good shake.
From reading through other comments it seems like 1lb or 500g of ground meat of choice.
What ever happened to the sage: sau-sage! add sage to taste.
Yes, I always sprinkle more sage on it when cooking it 😊
I love me some sage as well and use it in different recipes. Can definitely add some to this blend.
You never did say how much of the Italian Seasoning to put in your 1 pound of pork for home made sausages.

Oh my goodness, that was a big miss! I use 2 T per pound of pork.
