I love the way you simply snatched the jar of vinigar there haha. Thank you Erwan and team for visiting my hometown and featuring our go to comfort food Hidden Tapsi.
Here I am, binge-watching your "The Best Of..." series and enjoying every bit of it. You have your way of educating people. This is one of the vlogs that relaxes me the most, especially now that I am very pregnant and a very picky eater. 😅 There are days when I know I want to eat something but can't figure out what exactly it is. And through watching this, I get to realize what my cravings are. 😁 Later, when my husband wakes up, mag-aaya ako sa Hidden Tapsihan. 😋
Great video! For those that are velveting for the first time, don’t forget to rinse you meat after the velveting process or else your meat will have a strong Alkaline taste. After rinsing, then marinate.
We always eat there when I was in highschool. I make sure to visit their other branch everytime I am in Kawit. For me, it’s the best tapsilog I’ve tried 🤤
Well Done Erwan! Oh my, the passion thru the years have improved your cooking technique and knowledge, just goes to show how your enthusiam and authenticity shines through...
The beauty of Filipino cuisine is that we don't rely on heavy spices or herbs, it's all in the technique. Its easy to mess up with very few ingredients.
My aunt leonor, Lucban, Quezon, does carabeef tapa with nothing but salt but cooknit with very litrle oil and rub the meat strips around the pan on the caramelizing protein and fry it just untill you loose the redness of the blood in the carabeef. And for the dip, a real sour coconut vinegar, smashed garlic and a little salt.
Best tapa paired with the best sawsawan. But most of us in Cavite adds banana ketchup in our suka whenever we eat at Hidden Tapsihan. I don't know the reason why but it tastes so much better with ketchup.
I was lucky to eat there, when it was a bangko n table top in front of the cook. Mang Eggie powered me through many late night chibugan. The original hidden tapsihan has grown so much.
The best tapa for me is the carabeef tapa made by my grandma way back 35 years ago. Im still craving for it to this day. RIP to my grandma. It seems mothers knows the best stuff but second only to grandmas in everything...
Hey Erwan. I have a recipe that I created for a cafe here in Cebu that won the "Best of Cebu" "Best Coffee Shop" award when I was their sous chef. I can't name the establishment though but I would love to see your thoughts on it.
Best tapa is found in San Andres Market, Batangas beef, the fat especially is to die for :-) it's the traditional tapa, plain salted beef, doesn't mask the beef flavor
Rice cooked with salt is delicious. My husband is Puerto Rican and always cooks rice with salt and oil. Pinoy style rice to him is bland. I like both ways of cooking rice. My Lola always sun dried thinly cut beef for her home made tapa.
So good! savoury and well balanced with the seasoned vinegar. But watch out! Heavy on the calories and can leave you feeling weighed down. Eat in extreme moderation.
Wag kayo papaloko dyan sa hidden tapsi. 2021 nagpunta kami dyan with tropang riders galing kaming swimming.
Together with Goto hehehehe. Pero mas prefer ko no sugar. Peppery, Garlicky and medyo salty hhehehe masarap din nalalasahan yung hint of calamansi heheh Fell in love with Tapa na gawa ng Lola ko nung Prep then poof mukha na akong Beef hahahah.
Would be really interested for you to try different meat tendering techniques without water (love the discussion about velveting with chinese stir fry) using beef, that is sources sa Palengke. I've noticed that majority of the famous Filipino dishes do have some sort of prep time with water (pakulo, paiga, etc.) e.g. Bulalo, Nilaga, Karekare, Caldereta
Hello Erwan! Kudos to all your vlogs! Really informative and amazing!!! Just sharing.. i have a "suki" who makes tapa with just 3 ingredients and is air dried. Not the sweet kind though. But its good!

Because they only take what is enough for them, and yes tapang ugsa is quite an exotic meat that not all Filipino can eat. I've tasted it quite a few times and it's on top of my list, 2nd one would be tapang kabayo.
yung sasagot si Erwan in Filipino kapag Filipino siya kinausap.. that's respect ya'all! 😊👊

The fewer the ingredients, the harder it is to make.
Agree! It's not about the ingredients, it's all about the technique.
Go to Mindanao. For a new perspective on Pinoy cuisine
Tapa is smoked..ginagawa nyu? Hakdog?
@@jefreyvillar1094 Originally, yes. Like Tinapa, smoked fish.
ERWAN'S GENTLENESS IS MAKING HIM MORE POGI HUHU

I use to live in cavite city and we go at the hidden Tapsi at night after a drink 🍻. It use to be small with benches. 😁
I personally like the sunny-side ups with the crispy slightly toasty edges and the semi-runny yolk, Malaysian/Indonesian style 👌🏻👌🏻

Hello Erwan! Kudos to all your vlogs! Really informative and amazing!!!

Thanks I learn how to cook tapa🎉

Because they only take what is enough for them, and yes tapang ugsa is quite an exotic meat that not all Filipino can eat. I've tasted it quite a few times and it's on top of my list, 2nd one would be tapang kabayo.
Wow it must be super yummy that up to now you are still craving for it.. Sana kahit minsan matikman ko rin...Mahilig din akong magdevelop ng recipe..
uwi ko ng august puntahan ko yan
Wow, super delicious ❤🎉
Now I'm craving for some tapsilog! (partnered with a cup of coffee, even if it's almost bed time soon!)
awesome they use brisket as their choice of cut instead of using a leaner cut. Braising it then low temp frying is a nice trick to learn.
Love the microwave sound at the end. Lol
