Four Cheese Macaroni

  • Macaroni Pasta mixed with a cheesy sauce from a combination of Mozzarella, Red Leicester and Edam Cheeses and then topped up with some grated hard cheese and breadcrumbs.
    INGREDIENTS:
    Macaroni Pasta 250g
    Mozzarella Cheese 75g
    Red Leicester Cheese 75g
    Edam Cheese 50g
    Hard Cheese
    Breadcrumbs
    Sauce -
    Butter
    Flour 1/2 cup
    Milk 1 pint
    Salt
    Pepper
    INSTRUCTIONS:
    - Boil 250g Macaroni Pasta
    Add some salt in the water. This will increase the boiling point of the water and the water will have a
    higher temperature and will cook the pasta quicker.
    - Drain the pasta and leave that aside
    Cheese Sauce:
    - In a saucepan on low heat, add 3 tsp scoops of butter and 1/2 cup of flour
    Stir continuosly until it forms into a roux
    - pour a few drops of milk
    - Pour more milk a few drops at a time and stirring in between whilst on low heat until it forms into
    a roux if it has not earlier
    Carry on with the process of adding drops of milk and stirring ......until it turns into a SAUCE
    - Season with black pepper and salt
    - add the macaroni pasta
    - add the grated Mozzarella, Red Leicester and Edam cheeses
    Give it a proper stir
    Transfer it to a dish tray
    - Sprinkle the hard cheese on top by thinly grating it
    - sprinkle the breadcrumbs on top
    Put it in the oven for 10 mins at 200°C
    and then it is ready to be served
