  • Potato Bread Recipe for the Bread Machine
    1 1/4 cups warm milk
    4 TBSPS of soft butter
    ½ cup potato flakes
    3 ½ cups of all-purpose flour
    2 TBSPS sugar
    1 ¼ tsps. salt
1 ½ tsps. Quick rise yeast
Start with the warm water into the bread machine pan, then add the sugar and yeast. Add the butter and then add the rest of the ingredients. Put the pan back in to the bread machine and set it for the dough cycle. The dough cycle mixes and kneads the bread for about 10 minutes and then it goes through its first rise. Once it has finished remove the pan from the machine and form the dough into a loaf. Put the loaf into a well-greased bread pan, cover with a towel and let it rise about one hour or until doubled in size. Cook in a 375-degree oven for about 40 minutes. If you are using a thermometer you want the temperature to reach 190 degrees.
Sweet Potato Bread Recipe for the Bread Machine
    2/3 cup warm water
    1 tsp vanilla
    2 tsps yeast
    1/3 cup brown sugar
1 cup plain mashed sweet potato
    2 TBSPS of soft butter
¼ tsp each cinnamon and nutmeg
    1 ½ tsps salt
    3 1/2 cups of all-purpose flour
2 TBSPS dry milk. If you don’t have dry milk use milk in the place of the warm water.
Put the ingredients in the bread machine in the order listed. Put the pan back in to the bread machine and set it for the dough cycle. The dough cycle mixes and kneads the bread for about 10 minutes and then it goes through its first rise. Once finished, remove the pan from the machine and form the dough into a loaf. Put the loaf into a well-greased bread pan, cover with a towel and let it rise about one hour or until doubled in size. Cook in a 375-degree oven for about 40 minutes. If you are using a thermometer you want the temperature to reach 190 degrees.

Thanks so much for mentioning that you've used coffee mate as a substitute for milk powder; I've avoided some recipes because I had no dried milk, but I always have coffee mate. How freeing to know this!
I bought my bread machine ($14.99 at goodwill) because I couldn't afford a Kenmore stand mixer to do the kneading and haven't looked back ;-)

I really enjoy watching your videos. I have been making bread in a bread machine for more than 40 years and am always looking for new techniques and recipes. Your you tube station has been fabulous for me as I recover from surgery. I learn a lot from you. Incidentally, I agree that using the machine for mixing and kneading but not baking is the way to go. I get to control the shape and texture of the finished product by baking it in my oven. Keep up the good work! And thanks.

Love cooking, don’t feel it’s a chore but an act of love and necessity. Thank you for this and all your videos. I honestly had not thought of using the bread maker just for kneading! Brilliant! No bread machine. So I used my stand mixer with a dough hook. Just removed my loaf from the oven and I'm waiting patiently with my stick of butter for it to cool so I can dig in. Already planning to make french toast with the sweet potato bread. Not to mention that my imagination is running wild with what else I can do with this dough. Thank you so much for sharing this recipe and bringing back so many loving memories. Continue the Good Work!

    Hello.
I missed a lot growing up. I was the youngest. My mother tried to teach me soda bread but she used a hand of this, a hand of that. She also made bread in the large Iron frying pan with the handle going from one side over the top to the other, on the hob if there was ni read left for breakfast Looked like an Indian Naan bread delicious It used to be used on the open fire with the hook from the swing arm that went across the fire Then, bread was cooked in a pot with a lid put in the low fire and cooler bits of the fire covering it. I was small then. Later, I couldnt learn because I had become used to a weighing scales. My hands weren't the size of mama's.
If you have done soda bread, kindly advise. She also did white sweet bread with dried fruit. I'd like to learn how to do that in brown as well or half and half. Once after we had moved to England, there was a bread strike We could get flour but not yeast. Mama made yeast for bread from potato water. She gave it to and made bread for the neighbours.
Just mentioning if you were doing or have done any of the above I'd be grateful for information. I.e. The names of the videos. I'm j
    I
in my seventies now. I have an old Panasonic in storage. I never liked the shape or the holes. Most displeasing. Never thought of putting in the oven.. I'll re-employ it.

Can you freeze the extra sweet potato you have mashed and save that for the next time you make this bread? They both look like they would make awesome French toast!!

@xo2quilt I think they would both make great French bread. I haven't tried to freeze the sweet potato but I think it could work just fine as long as you brought the sweet potatoes up to room temperature before you used them. Good luck!

In case anyone else prefers to measure by weight, in the potato bread recipe, for me the 3.5cups flour was 420g, and the 1/2 cup potato flakes were 30g. :)

I always put water or milk in first flour and all other stuff on top, I never mix salt in with yeast. I always heard salt will kill the yeast, don't know if its true or not. I am going to try the sweet potato bread it looks amazing. Thank you. So far there are no ads, why is that?

I fluff my flour and then measure without scooping so I am wondering if that is the reason you would have too much flour with 4 cups. I make lots of sugar cookies so my flour has to be super accurate to get the right cookie to decorate. Use a spoon to put flour in the cup. ❤

I love my bread machine . Don’t use it much anymore because I don’t make bread much. Don’t eat much bread.
But during the holidays I use it. I used to use it all the time.
Let’s just say that when you’ve been cooking for a long time, you tend to know the measurements by just estimating.
Those who have not cooked much probably want to stick with the measurements and use measuring cups and measuring spoons until you’re confident enough to just guess or estimate.
I’m 60 so I sometimes just guess at what it needs .
I follow recipe so I don’t forget something, but I basically just guess sometimes
    TFS ❤

@debbiealtman5373 We generally go through one loaf of bread a week, and there are three of us, so it gets used every week. Sometimes more because we do love cinnamon buns, which I also have a great video on how to make. You are right! When I'm making a new recipe, I always follow the recipe, but then when I'm comfortable, I am less cautious about perfect measures. Have a fantastic day!

From what I have heard, potatoes were used as a filler when wheat crops failed. It made flour expensive so bakers used various ingredients to stretch the flour.

I wouldn't toss a bread machine just because it's making a little noise--mine makes weird noises, but it still works great! I generally let it go the whole cycle, too, so unless it quits or starts smoking or walks off the counter and breaks the big dome lid, I'm okay with it!

You might want to edit your recipes. In potato bread, you used 1 1/4 cups milk, not 1 1/2 cups water. In the sweet potato bread, you left out the 3 1/2 cups AP flour. The reason bread recipes always keep the salt and the water away from the yeast is because some people add their ingredients in the morning and set them on a timer to be ready for their supper when they come home from work. (Salt kills yeast like it will other living things--slugs, plants, etc.)
