Have had a salt cube and multiple salt blocks at home over the years. good for flattening and cooking skirt steak for tacos. You can get them screaming hot. The "redness" in the meat is determined by the age of the cow: Lighter red younger cow and so on. Mysefl prefer a light red meat to a medium red who wants an old hag O)

I don't mind taking a fatty ribeye to mid sometimes, it allows the fat to render more and becomes a lot softer. Easier to eat.

Question - I usually dry brine my steak the night before. Would doing that and the salt block make the steak too salty?
Probably, depending on how thick it is... cookie rack and some salt on it for 12-24 hours gives me great crust all the time...
