      Put the salmon skin down into your hot pan. Cook it to ~80% on skin side and turn it. You also can cook it just in skin side and baste it with the oil and some herbs (with a spoon). In the end you don't need to eat it. it just helps with cooking

    The skin is actually a valuable part of the fish, as a matter of fact; salmon with skin on is more expensive than "sushi grade" salmon that's been pre skinned. This is because skin has it's own texture and flavor, helps the fish retain moisture, and can be used as a separate dish in itself. To throw away the skin is to throw away perfectly good food.

    i have the fortune of living in italy so whenever a see a butter or sunflower oil in a recipe, i switch it to olive oil when possible. Especially for fish i suggest using good olive oil blended with garlic and parlsey. Olive oil is only one that can mantain high temperatures without breaking his molecular structure. Other oils break down creating dangerous compounds like acrolein etc. Also olive oil is rich of many compounds good for our health. Also consider, a good olive oil is not less than 7-9 euros per liter at least in Italy so in other countries will be more for transportation etc. If you buy olive oil for like 2 dollars, be sure its not olive oil.

      The skin contains harmful substances that came from the waters the fish lived . I assume the pale yellow ingredient was butter . The sound was blocked . I heard nothing but I always use butter / never margarine

    • @zjparker5310
      @zjparker5310 11 месяцев назад +3

      @elaineelliott3138 I really cook the skin till crispy, the whole fish is in the water, I don't eat raw fish ever, once I cook fish there no chance for bacteria to live and I purchase from a reputable and clean fish market.
      The skin is my favorite part.
      Everyone has a different opinion of what they like and how they cook.

      Some people don’t like the skin. You can leave it on and cook it very crispy!!! And the margarine (or butter, if you wish) is used to POACH the fish filets in…absolutely delish. With some lemon juice squeezed on at the end!!
