Well... in the episode "The 200" it's pretty much established that Roger has 200 personas (plus himself, so 201). Considering that the series is now on its 307th episode (as of the last one that aired), I want to say that that is the number of Roger's personas. However, it's not an accurate count because in multiple episodes he is Uncle Roger, while in others (like the Ricky Spanish one, as well as the one with the birth of Rogu), he has multiple personas. So... maybe 500? But probably 99% of the population of Langley Falls is no one but Roger.

Eh, remember, he still makes them up on the fly apparently. I think they might have a list of the most important, who interacts with them everyday, who they should keep up with in case of emergencies, and every criminal persona that might be traced back to them. Otherwise, they likely don't have the emotional capacity, or memory for that matter, to keel up with all of them.

I think it's important to mention that there are some personas that even the Smiths can't see through, so, it's possible that only the people that Roger has explicitly said he is not (Like the race dog breeder for example) may be Roger.
My favorite is the oceans 11 parody where Roger is involved in a heist Steve is setting up and he introduces Roger to toshi and toshis like oh right the alien in a wig and Steve's like yes on my mother's side. Then by the end of the episode Roger starts a new heist where he's his own getaway driver and he's like wait how am I over there now maybe I'm the one going crazy!
