Adding some Sherry to your duxelles is a huge flavour punch, add towards the end and carry on until your mushrooms dry as normal but totally deelish Looks beautiful though.

I am going to make this for Christmas Dinner and wrote out the whole recipe. This is amazing. You didn't say what temp for the roasting of the kidney beans and chestnuts. Is it the same as the sweet potato? I will check back after I make it. Bravo to you!

Hi Crystal, I recently tested out this recipe, it turned out absolutely amazing even for the meat eaters! Could I ask if you rolled the pasty, because the puff pastry i bought in the UK supermarket, the top layer cannot cover the wellington without a bit of stretch, but i also worry, if I roll it, it won't turn out right texture after put it in the oven. Is it safe to do it on the day before, keep it in the fridge and then put it in the hoven the next day?
You could make the stuffing and keep ready for the next day. layer of pepper and spinach ready too..& just assemble everything and bake it..I would do that.

I'm planning to coordinate the traditional and this vegetarian version. Is it OK to do the fillings in advance and keep cold until assembly?
I made this last night and did all but the onion/carrot/bread part (as the bread would have gone soggy), taking the food out of the fridge a couple hours before assembly. Worked fine!

Flax seeds look up flax eggs super easy
Olive oil may work, too!

Aquafaba (the liquid in a can of chickpeas) mixed with almond milk and a little oil works like a charm. Sounds weird but trust me

You say the mushrooms are the only place where you use butter but isn't puff pastry made with butter? What can you use to make it vegan?
Pepperidge Farm is vegan. That brand is in every grocery store in America

Use plant milk with a tiny pinch of turmeric whisked in (I use soya milk) it looks the same, not too much, though, or it gets soggy.
Ugh. Egg.
