Thyme is my favorite herb too! It's my secret ingredient for fried eggs. My plant I make everyone smell is kaffir lime leaves. Jacques, show us your lemon verbena! Jacques' new obsession is going to be creating flavored oils & vinegars.

An added note: I gardened in NW Oregon for decades so can relate to Ana's experiences in Seattle, then moved to Arizona. Growing herbs is different as is to be expected, but I fully intend to master it. As with you both, herbs would be my one penultimate category of plant to grow if I could only choose one. Thanks for giving me more food for thought! Cheers.

I’m with you on the lavender Jacque, I’m in the Napa Valley and it’s everywhere except my garden 😂. Also dill. Oregano on the other hand, has self seeded all over❤️

Super insteresting chat. Adding onto the talk of lavender, its also great to cook with! It pairs great with dairy, as well as oily fish, lamb, tomatoes and potatoes.
Which variety of lavender you choose is important. You need to pick a variety that is low in camphor (think moth balls) as it is super unpalatable and bitter. Look for Angustafolia lavender, and use the buds before they have flowered for the best taste.

I love everything herbs and grow them every year. Love rosemary, thyme and lemon thyme (great on chicken). I grow in plastic whiskey barrels. Cilantro tastes really different when gone to seed.
