hmm i think a power grinder chould make the metal too hot on a single point if you not carefull enough and its really easy to cut off too much. so yes, if you have time and you want it so be real clean, use your hand tools
I actually searched for this. I am restoring a similar cleaver that was given to me by the owner of an antique shop here in Hawaii. This guys blade is 4x more rusty as mine (my rosewood handle is in good shape) and I am using a powered belt/ disc sander. So far I spent 1 hour on it and just need to get the rust pits out. I commend him on his perseverance and patience. It totally encourages me to finish and look for a carbon steel 8” kitchen knife. Forget the stainless steel knives, (which are hard to sharpen/polishand therefore don’t hold an edge).

To be fair, with as rusty and crusty as that cleaver was before he restored it, (all by hand mind you), that's a good tomato cut. Not as smooth or as clean, but for a hand restoration, that's quite impressive.

Legend has it that the man of the woods was the original owner of the knife. Every night he would cut his lettuce and tomato and celery and make very bland sandwiches. That is all he ate. As the days passed, he became weaker and weaker due to a vitamin B-12 deficiency (his bread was not fortified). On December 1st, 1943 he was on his back porch cutting a particularly large celery stock when he lost the strength to continue. He fell off the porch and broke his neck when he hit the ground. Kudos for using all hand tools! Amazing how much of the first stone wore away from this one project. Was almost expecting to see the diamond paste brought out to give us the super polished mirror look.
I love how he just takes something that doesn't even look like a knife and turns it into one. He dedicates so much of his time and effort to make a video like this for us to watch.
My Dad found a large rusty kitchen knife (no handle as well) buried in the backyard of one of the homes we used to own; restored it, crafted a wooden handle and gave it to me. Watching this video made me keenly aware of the labor of love he put into this beautiful work of art. I still have his knife.
It's not if it's carbon steel, but a high carbon steel. Iron is turned into steel by adding carbon. Even stainless steel has carbon, normal 480, which is parts per million

My Dad found a large rusty kitchen knife (no handle as well) buried in the backyard of one of the homes we used to own; restored it, crafted a wooden handle and gave it to me. Watching this video made me keenly aware of the labor of love he put into this beautiful work of art. I still have his knife.
