We have some kind of apple tree that stay goes from granny smith for weeks and weeks and weeks until it suddenly becomes a rather dull variety that tastes vaguely like crisp golden delicious. So I pick when they are "granny" green and make apple butter! Anyway, went for the grilled cheese version... I sliced up a fresh one and made the above sandwich with camembert and sharp cheddar. I put the toasted walnuts on just before marrying the two slices in the pan, topped with a little more grated cheddar and flipped. Honestly, one of the best grilled cheeses I've ever made, and I've made enough to start an overpriced food truck that parks outside of comedy venues in LA.
Apple, particularly Honeycrisp, is an EXTREMELY underrated sandwich ingredient. The best burger I ever had was a smashburger I made with an In-N-Out style burger sauce, sauteed onions, cheddar cheese, and a slice of Honeycrisp! Beef and apple work so well together. I've made a similar sandwich served open face using only crusty bread, butter, cranberry sauce, and cheddar. Cook in oven until cheese is melted. It's a great way to use all that cranberry sauce we all have but never use.

I made a version one of the featured sandwiches here for the first time this morning after waking up feeling a little under the weather and seeing yesterday's Recovery Sandwich. Substituted the turkey for plant-based chicken and the apricot preserves for leftover cranberry sauce so it kind of turned into it's own thing but it was really good with the toasted bread and cream cheese! Made for a great late breakfast. So I think I might try this one tomorrow too as a grilled cheese since I've still got some cortland apples in my fridge.

Hot Chocolate in Chicago used to have a grilled cheese sandwich that I loved and it came with apple slaw which was just julienned Granny Smith, the sandwich was dark bread, pumpernickel maybe? and aged cheddar but they would brush honey on the outside of the bread while it was frying and it was delicious. I think you could probably use that great Velvet Bees Honey Butter instead of butter and honey on their own.
This reminded me of sandwich out there called the Vermonter which is basically this plus meat. I've seen a lot of variations, some use ham, some use turkey, some add pickled onions. I think you're also supposed to incorporate maple syrup somehow, like a maple turkey or maple butter. Anyway its pretty good.

Been doing toasted cheese with different fruits for a while. Works good with banana and pear as well. Never thought to add nuts to the mix. Will have to try that soon.
Plussed-up with muhmmara to maximize the walnut's earthiness might be nice. The crunchiness would be lost. But some crushed walnuts could also be added.

As is I think molars are required for this sandwich. I'd have to grind the nuts to the consistency of the nutmeg; powder. Honestly, that with some apple sauce {home made of course} and a grilled cheese treatment, might give it a go
I work at a nursing home in Pa and 40 yrs ago we served apple dumplings with cheddar cheese as a supper entree. Was well received, a hit!
