    Great dessert ! Can the brioche dough be made by hand if you don't have a mixer ?

      It can be buts its pretty messy! Its a sticky dough so make sure you get a bench scraper to help knead and fold in the butter.

      Also you may want to use the 'slap and fold' technique rather than traditional kneading. Its normally used for high hydration dough but works well with brioche too

      Then you have not enought gas inside, mix it or put more gas

      @@ajirikoko I don't know, this is a recipe without milk. If you don't like it, just find another recipe. I cannot do recipes for bread, This is a recipe from the restaurant I used to work in.
