    Very nice calming interview. I have read that they used chemical in their bread to condition it. It was in a small quantity and was approved by the FDA and it is called azodicarbonamide (ADA). It is massive operation and I doubt anyone would be able to copy there model in the present time. Very humble down to earth gentleman and appreciate you sharing it

      Thanks Hassan! Ralph touched on that briefly at 22:29. The "Yoga mat chemical" incident was the one that hit Subway hardest out of all of the challenges they faced over the years. Apparently it was in hundreds of foods at the time, and many other big name franchises used it in their dough. At least most places got rid of it after the public outcry. Potassium bromate is bad too but it's still in many bagels, breads, crackers, donuts and pizzas. 🙂
