@@Chungus_army That is the legendary panther. For a regular panther you just go a bit further down the road to where the rocks are. Hang out in those woods and very quickly you will either see a panther or die to one. EDIT: but the trinket from the legendary panther make it well worth doing those challenges. They don't take very long.
Ngl I feel like the grizzly saddle should have been the best cuz they seem more rare and way more hard to kill, like they are the only animal I've had to use express rounds on while not being on my horse, But maybe that's just me idk, i just feel like Rockstar fumbled,

Get the 'double bit hatched' one hits any animal you manage to hit square in the face (can be obtained from a log near Wallace Station, look for the random little dot slightly up and then left on the map)

The Beaver and the Panther saddle are the best but I included the Gerden Vaquero saddle which is my personal favourite.
