This recipe is fire! I had never made salmon croquettes sovI was a little unsure. I remember growing up and my mother used to make them and they would stink up the whole house. With this recipe you won’t have this problem. Since she didn’t say how much seasonings to use, I just used my discretion, tasted it before cooking like she recommended and they came out perfect. Not over seasoned and moist. This will definitely be my go to recipe for this dish!

This looks great. The key to not letting it fall apart is to stick it in the fridge or freezer for a bit. The cold will help it mold a bit 😉 I just heard you say what I said above lol 😂
Looks great! Going to make some this week with fresh salmon....and Love peanut oil! Also if your adventurous, check out grape seed oil for frying. It’s a healthier oil that is still perfect for high temperature cooking
never occurred to me to use fresh salmon, and I am a BIG fan of this dish and have been a can guy since my mother made it when we were children. I don't make it often because I'm not crazy about my house smelling like fish afterwards, but I will definitely try this recipe out. Will follow up later to let you know how I like it.

16 oz to a pound, 2 pounds, plus veg maybe 2.5 lbs or 40 oz and you made 8 patties, approx 5 oz per patty. That's a good restaurant size. I bet spicy brown mustard or remoulade would be awesome on those. Gonna give it a try. Thanks for the recipe. You could sub the bread crumb with ground pork rinds and make it keto.
Do you know where I would generally look for restaurant sized salmon? Maybe a fish market with day boats? Even Costco salmon isn’t as thick as some restaurants. Thanks in advance for any suggestions you might have.
@@dianemcquay8460 Depends but I live in Oklahoma and there is a local Asian wet market that has fresh fish flown in daily. My suggestion would be to find an Asian market.
I was pleased to find your recipe with fresh salmon. I don't do much canned foods due to the amount of sodium in canned foods. I didn't like salmon croquettes when I was growing up, but I will try these. I'm with you about the aesthetics of food. 😊

I struggled trying to find the right oil to fry my croquettes. I’ll have to try this recipe. Sometimes I put a little smoked salmon in my mixture with a little lemon zest. Yours looks delish! And I love that spatula.

The creole seasoning is Tony Chachere's & the last name is pronounced SASH-ER-EES - it's cajun/creole so that's how they say it even if it's spelled like it would be pronounced differently ;) It's good stuff to cook with for sure! :) I love what I see of this recipe & will definitely have to try using fresh salmon to make it :)
looking good girl I make mine a little different I ADD bell peppers and celery , onion , Garlic salt , pepper , salt , lemon pepper seasoning , eggs , flour and very little meal salta my veggies first then add stir add flour and mix well and fry on medium heat very tasty very good melt in your mouth yummy yum yum 🙄 everyone makes them different I love the way my mom cooked them but for the life of me I can never get them to taste like my mom everything my mom and grandma cooked had the best taste a taste I can't come near to duplicate at all it was just something about the way those old people cooked that I can never seem to match sometimes I believe it's the way they are growing food these days "to fast" but ; you will never get that taste from the good old days even with the fruits and veggies you can never get that old school taste anymore one thought they are growing stuff to fast "even the meats" those days are long gone know matter how I cook any of my food I can't get my MOTHER'S nor my grandmother TASTE now I have stop trying I JUST COOK and don't worry about it anymore 🙄 be happy with what I have

I steam the salmon in a bamboo steamer for five minutes or less. Flakes but never dry. It cooks more when you fry them.
I don’t precook it completely. I’m aware it cooks more when you fry them, they come out absolutely amazing. This recipe does not fail 😊
