There is a spice mix which is actually used to make pares. This is sibot composed mixes of tree barks, stalks, star anise, clove, berries. The resulting broth where you stew the meat becomes dark. You will then add salt pepper, etc to flavor the broth.
The best pares are the ones eaten on the cart, on the side of the streets. My favorite is from the streets of Taguig. No overwhelming star anis flavor, more on the savory side than sweet. I wanna fly back now to ph!

Jonas started out just like D' original pares, the way the area looks... Jonas is still at the same location but they renovated the area. There used to be another pares joint just around the corner of Jonas. It was named Rudy's pares, rumor has it that the chef/cook of Jonas put up his own and called it Rudy's Pares house... but it disappeared after a few years. I completely agree with you on D' Original pares... still is the best that i have tasted... BTW you should also go and try Cocoy's Pares along Visayas Ave in QC.
This is actually true. Rudys And D Original pares used to work in Jonas. They broke away and put up their own. I remember the old days of Jonas who just looks like an ordinary paresan
You should try Bluesmith Coffee and Kitchen! It’s in Pasong Tamo. It has everything from Filipino comfort food to American Styled Breakfast all the way to Spanish Dishes. Also in my opinion has the best coffee in Manila.
Next time try the 3 best pares places in the Metro. Pares Point in Chino Roces, Dirty Pares, just literally in every corner of Manila and Pares sa Retiro.

Hi Erwann! Parañaque is known for its tapa with Maty's as pinakasikat na tapa house. Sa surveys ng best tapa Maty's always on the list. Their barbecue is so good too! Pag nakapunta kayo sa Parañaque please check it out. At masarap na lasagna sa canteen at the back of St. Andrew's school. I'll get back to you sa name. Yes. The Pares Mami House in Laloma is the best Pares. Havent found anything close to it. It's so good it almost taste like a budget Beef Brisket. The cook has been the same for more than 20 years now. Up to this date i think Vice Ganda still eats there.

the Jonas branch you visited is the original one. it has been renovated so many times. But living in the area where the original pares mami house and jonas is located, Original Pares is still the best for me.
Btw pares is chinese beef brisket with fried rice... The rice was suppose to be Yang Chow fried rice and the same spiced beef brisket that they serve beef mami with though through the years they added cornstarch to help the sauce grab on to the rice. The street version on the pares is more interesting, it has offals similar to gotong batangas but no liver and lotsa beef skin. If you are lucky, some would have brains and eyeballs as a special.

You should try the street pares. They called it camto or pares and most of them have beef fat floating like bits. The best kanto pares are the one with batangueno seller. They have small plastics floating that you can choose from (matang baka, cow's brain, cows testicle.) They are one of the cheapest food an office person would choose. (Mostly BPO peeps)

I recommend that you also visit different ihawan spots in Manila. Sobrang daming options, pero for me it's Ladiao in Montaya Street, Sampaloc, Manila.
