Smashed Potatoes with Basil Avocado Pesto

  • ✨Ingredients:
    1 - 1.5 lb bag of baby potatoes (red or golden potatoes)
    Salt & pepper to taste
    2 tbsp olive oil
    A handful of fresh pomegranate seeds (garnish)
    1/2 tsp Paprika powder (garnish)
    👉Method:
     please, the potatoes in a pot of water, bring it to a boil and cook until the potatoes are soft and fork tender. This should take approximately about 15 to 20 minutes. Once they’re done the potatoes and let them cool slightly.
    Then place the potatoes onto a baking sheet and using the bottom of any cup, smashed each potato down until they are flat just as shown in the video.
    Season with some salt and crushed black pepper, followed by a drizzle of olive oil. Using your fingers wrapped up potatoes until evenly coated and then roast them for 30 to 35 minutes at 400° or until golden brown and crispy on the edges flipping them halfway through.
    🌿For the Basil Avocado Pesto:
    1 cup fresh basil leaves
    2 cloves of garlic
    1/2 cup crushed cashew nuts
    Zest of one lemon
    Juice of one lemon
    1 ripe avocado
    Salt and black pepper to taste
    1 tbsp olive oil
    👉Method:
    Add all the above ingredients for the pesto to a food processor or blender and blend until silky smooth.
    👉To assemble:
    Arrange the roasted potatoes onto a serving plate and spoon the prepared pesto sauce on top. Garnish with any greens of choice, sprinkle some paprika powder on top followed by fresh pomegranate seeds and enjoy every single bite.
