    Wonderful recipe, my daughter has allergy to xantane gum, can we use more guar gum? Is there anything else we can do?

    Thanks for this video Fabio! Can’t wait to get applicable flower or these ingredients. xanthum is the key. Tried making gluten free pasta last night-even with milk, different proteins, and egg combinations-it crumbles too easy. Ya need that elasticity.

      Check some vegan pasta websites. They'll likely recommend using olive oil or something like aquafava (the liquid in a can of chickpeas).

    What could I substitute the cornstarch for? Or could I just mix everything else together without it?

      You can probably use tapioca starch, potato starch, or arrowroot in equal amounts. But in this video, he's actually using corn FLOUR. It is not the same as cornstarch. If you need a substitute for corn flour, you can probably just substitute sorghum or a different flour.

    He says corn starch in this video. I check the recipe from the link in the description... It says corn flour. Has anyone made it to know?

      Florida Salon yes. It was a mistake he made. It’s suppose to be corn flour. They made a statement to that on his recipe link.

      I could tell from the appearance it was corn flour. Corn starch is white and powdery.

    Then what do you do? Just boil it? I want to make a thin sheet of pasta and cut it into ravioli for my daughter who has Celiac Disease. Can you do a video with Gluten Free Pasta making Ravioli and show how to cook it? Thank you

    does semolina have gluten in it?

    Corn meal is what you are using. Corn starch is white and is pure starch.

    That is not corn starch. It could be masa harina, but corn starch is white, just like tapioca and potato starch.

    is it cornstarch or cornflour? its color yellow.

      @DA.DIY. 4EVA That is not true. Corn flour is ground corn. Cornstarch is made by pulling the starches from wet corn and then drying them.

    try 1 for 1 flour put in roller it taste as good as gluten
