I was diagnosed with celiac disease a few years ago and I cannot tell you how much I appreciate this video!! I will be adding this pasta recipe to my book. Wondering if you could do an episode based on turning regular food into a gluten free substitute? As someone who has been able to eat regularly and now switched to gluten free has been a struggle to fight the cravings for the food I was once able to have.
I'm sorry I don't have cooking suggestions, but a question about your disease if you don't mind. Did you always have problems with gluten containing foods? Or where you fine and then started noticing issues? I'm asking as my wife had no issues with gluten, but after 2 pregnancies, she has an ocasional hard time with certain foods. On the flip side we now know which "breads" are real honest to goodness bread and which are some tasty chemical concoction.
@@zeroelus pregnancy can be known to trigger celiac! but even a crumb of gluten would trigger a celiac reaction. to get tested, you need to eat gluten for two weeks so they can look at your intestines.

I was not expecting to tear up this early in the morning. I lit up like a kid on Christmas to see GF and Babish in the same notification. I don't mean that in a rude way at all, I just know how difficult gluten free cooking and baking can be. I have noticed it requires a particular blend of patience and hope. As someone who is new to this whole GF thing, I am very grateful to the GF cooking channels I already watch. Omg-I’ve been waiting for a big youtuber to do a gf pasta forever I have had severe celiac disease since I was a kid and so does most of my family No recipes for fresh gf pasta work well but I hope this one does

I can't recommend Becky Excell's book "How to make anything Gluten Free" highly enough. Not sure howavailable it is in the states, but it's been a lifesaver for cooking for my Gluten Intolerant wife. I'm quite excited there's a baking one coming soon!
Man, I've been hoping for this day for years. You are my go to source for cooking AND entertainment on RUclips and, as someone who has a severe gluten allergy, I've often tried reworking some of your recipes into GF variants to various levels of success. IF you see this PLEASE explore doing other GF videos for things like breads and pizza doughs!!! Please Babish, you are my only hope.

Try using different flour blends for different baked goods. Some mixes work better for fluffy things like bread and others work better for things like cookies. I love using Pamela's baking mix for cookies and Grandpa's Kitchen baking mix for rolls and fluffy things.

In fact, the name comes from Ancient Greek, who were some of the first to document cases of this disease if I’m not mistaken. My carb-loving, baking-hobbyist mom was diagnosed with celiac disease several years ago and it's been a slog for her to find ways to still eat the foods she loves without ingredients that want to maim her digestive system. You might consider doing a quick video or intro on cross contamination to account for another significance source of gluten in the kitchen. I'm seeing a lot of new people with celiac disease in the comments here and I think it might be helpful for them. Also, why not do gf bread next? There are a couple gluten-free recipes for rye and/or challah bread that I haven't done yet and I think you could do really well.
Oh my gosh yes, thank you for mentioning cross contamination/cross contact. So often people just don't get it, and then a food I could have eaten gets ruined for me. Sigh.

I nearly cried when I saw this. I was literally diagnosed with celiac disease last week, and it's been a really hard adjustment. As a celiac diagnosed 20 years ago, absolutely great call on the Tinkyada, and great call on the xanthan gum. Tinkyada is easily my favorite for storebought out of many many brands, and xanthan gum is an absolute godsend for pretty much every gluten free recipe

My GF just got her gluten-intolerance diagnosis last week so this is very welcome. She didn't have any signs but her 30 yr older mother has developed health issues.. several tests later it turned out she's been gluten-intolerant for her whole live and never knew it. She now has intestine issues and because gluten-intolerance can be inheritable, both my GF and her sister got tested. Results were through the roof. It sucks big time and she's quite upset over all the food she can no longer eat but stuff like this helps!

Thank you Babish for this episode! Especially thank you for making the "pre mix" instead of using the boxed one only. Boxed pre-mixes change radically depending on the brand, and also considering I'm not in America, I would never be able to access whichever you could use. Now with the ratios from all the different starches and flours, I can make my own. Once again, thank you and hoping to see more GF around here.
Not all xanthan gum is gluten free, so beware of that. I work at a health food store, and one of our regulars had to give up her favorite yogurt when they added xanthan gum to their recipe. She had a terrible reaction.
This is actually really helpful i was diagnosed with celiac a few day’s ago and it kind of feel’s like a death sentence to my food loving heart but im glad there are people out theres willing to help

Glad to finally see something like this on your channel! My mom owns a pasta machine that she was only able to use once to make ravioli. We recently discovered that she's gluten intolerant (for years we all thought it was a problem with her vesicle) and it's been rough on her, given that she can't eat most stuff she used to have. And in the area of Portugal we live in, especially, finding gluten-free products is a challenge. So ever since we found this out, she hasn't used her pasta machine ever again. I really need to show this to her!

my family, confused about why I just sprinted into my room to watch a pasta video: ???????
My GF just got her gluten-intolerance diagnosis last week so this is very welcome. She didn't have any signs but her 30 yr older mother has developed health issues.. several tests later it turned out she's been gluten-intolerant for her whole live and never knew it. She now has intestine issues and because gluten-intolerance can be inheritable, both my GF and her sister got tested. Results were through the roof. It sucks big time and she's quite upset over all the food she can no longer eat but stuff like this helps!

My mom has been allergic to wheat since before I was born so our family pasta nights had to change before "family pasta night" was even a thing! Love to see Pasta Joy, we've been using their lasagna noodles for YEARS!!! Rice and Quinoa flour are AMAZING substitutes!!!

Thank you Babish for this episode! Especially thank you for making the "pre mix" instead of using the boxed one only. Boxed pre-mixes change radically depending on the brand, and also considering I'm not in America, I would never be able to access whichever you could use. Now with the ratios from all the different starches and flours, I can make my own. Once again, thank you and hoping to see more GF around here.
Not all xanthan gum is gluten free, so beware of that. I work at a health food store, and one of our regulars had to give up her favorite yogurt when they added xanthan gum to their recipe. She had a terrible reaction.
Maybe she's allergic to xanthan gum though, no?

Glad to finally see something like this on your channel! My mom owns a pasta machine that she was only able to use once to make ravioli. We recently discovered that she's gluten intolerant (for years we all thought it was a problem with her vesicle) and it's been rough on her, given that she can't eat most stuff she used to have. And in the area of Portugal we live in, especially, finding gluten-free products is a challenge. So ever since we found this out, she hasn't used her pasta machine ever again.
I really need to show this to her!
