Simply amazing and delicious plant-based Shepherd's Pie

  • INGREDIENTS:
    * 2 tablespoons olive oil
    * 1 cup chopped yellow onion
    * 1 lb. ground tofu meat (recipe below)
    * 1 teaspoon dried rosemary leaves
    * 1 teaspoon dried thyme leaves
    * 1/2 teaspoon salt
    * 1/2 teaspoon ground black pepper
    * 1 tablespoon vegan Worcestershire sauce
    * 2 garlic cloves - minced or 1/2 teaspoon garlic powder
    * 2 tablespoons tomato paste
    * 1 1/3 cup veggie broth
    * 1 cup mixed peas & carrots
    POTATO TOPPING:
    * 1 ½ - 2 lb. russet potatoes -about 2 large potatoes peeled and cut into cubes
    * 4 tablespoons unsalted vegan butter - 1/2 stick
    * 1/3 cup vegan cream
    * 1/2 teaspoon salt
    * 1/4 teaspoon ground black pepper
    METHOD:
    * Add the oil to a large skillet and place it over medium-high heat for 2 minutes. Add the onions. Cook for 5 minutes, stirring occasionally.
    * Add the ground tofu to the skillet and break it apart with a wooden spoon. Add the, rosemary, thyme, salt, and and pepper. Stir well. Cook for 5-6 minutes, stirring occasionally.
    * Add the vegan Worcestershire sauce and garlic powder. Stir to combine. Cook for 1 minute.
    * Add the tomato paste. Stir until well incorporated and no clumps of tomato paste remain.
    * Add the broth, the peas and carrots. Bring the liquid to a boil then reduce to simmer. Simmer for 5 minutes, stirring occasionally.
    * Set the meat mixture aside. Preheat oven to 400 degrees F.
    MAKE THE POTATO TOPPING.
    * Place the potatoes in a large pot. Cover the potatoes with water. Bring the water to a boil. Reduce to a simmer. Cook until potatoes are fork tender, 10-15 minutes.
    * Drain the potatoes in a colander. Return the potatoes to the hot pot. Let the potatoes rest in the hot pot for 1 minute to evaporate any remaining liquid.
    * Add butter, cream, salt, and pepper. Mash the potatoes and stir until all the ingredients are mixed together.
    ASSEMBLE THE CASSEROLE.
    * Pour the meat mixture into a 9x9 (or 7x11) inch baking dish. Spread it out into an even layer. Spoon the mashed potatoes on top of the meat. Carefully spread into an even layer.
    * If the baking dish looks very full, place it on a rimmed baking sheet so that the filling doesn’t bubble over into your oven. Bake uncovered for 25 minutes.
    * Cool for 15 minutes before serving.

    I've made hundreds of shepherd's pies, both non vegan 😢 back in the day, and many vegan, and not once did any of them turn out as gorgeous looking as Janas 🥲🤣 I'd definitely try it with this tofu mince though.
    And rusticity _should_ be a word 😂💚

    😋 vegan shepherd's pie (never had a tofu version). I have had a lentil or baked beans version( it was haricot beans in a home made sauce for the beans version). Another excellent video and recipe Chef Jana and love 🥰 it. Love 💕Chef Jana.

    Yum! I don't usually use any tomato when I make cottage pie, but this recipe has me thinking. I really love American Sloppy Joe and the appearance of your pie reminds of sloppy Joe. I'm thinking of adding the cottage pie veg to my Sloppy Joe and making a cottage pie out of it. And the crispy peaks on the mashed potatoes! 😍😋 Thanks, Chef!

    Its often topped with a thin layer of grated cheddar too (vegan for us of course) and although the idea of cheese on this sounds really weird- it actually works. (Certainly not necessary though 😊)

    Dont know if I'm breaking any rules here, but I like to put canned mushrooms in the "meat" and use soysauce instead of salt.
    And it's soo god!

      When you've been vegan for years, you learn there are vegan versions of most things, and how to make sure you get the right one. The vegan audience doesn't need the hosts to constantly describe every item as "the vegan version" as its implied on a vegan channel
