I’m going to try this with a monstera plant. I think that I enjoy seeing plants thrive in water just as equally as I do seeing them grow in a soil based substrate. 👁️👁️roots is satisfying!

Most plants won't harm the shrimps. But if you're looking for suggestions, hydroponic plants also work. And you can get the food from the plants to feed them again. Making a more self sufficient system.
These plants root in water... Only the stems go in the water. It you want to grow completely submerged plants, you must use aquatic plants. The best place to get aquatic plants is an aquarium shop or fish shop.
I find doing this will significantly shorten a plant's life. Wouldn't particularly recommend it, but that's my experience. What works for me, may not work for someone else, and vice versa

How about doing some Jade. I can't remember how long it took for mine to root
You can propagate your jade cutting in water.
It takes 2-3 weeks to grow roots.
Shouldn't you let the stem be out of water for 12-24 hrs before putting it in?
