Good recipe! I myself don't use onions, but I've seen it done. The shallots would be especially nice. Tom kha gai is my favorite dish in the world. If I could only eat one food the rest of my life, it would be this. When I make a big pot to share with others, I make it without any peppers because I have my Thai pepper sauce and chili flakes for my serving, which I like fiery hot.

Chef, this is my fave soup. ?? Would it not be better to strain the lemongrass and galangal and kefir leaves and then add the mushrooms, milk ect? The lemongrass and galangal are very woody and tough to eat. Just a thought.

Boiled galangal with chicken. Use tamarind. not lemon juice It will have oiliness mixed in the soup. 4. Tom Kha Gai is a mild spicy curry. So must have red chilli and dried chili sprinkles
