    ÇİĞ KÖFTE
    Ingredients:
    2 slices onion, 20 g
    1 clove of garlic
    1 teaspoon tomato paste, you can use passata as well
    1 heaped teaspoon sweet pepper paste,
    ½ cup fine bulgur, use brown bulgur if you can find
    ¼ tomato, 40 g
    1 good handful of peanuts
    1 levelled teaspoon isot pepper (or any kind of spicy pepper)
    1-2 ice cubes
    1 heaped tablespoon ketchup
    1 levelled teaspoon sumac
    1 pinch cumin
    1 pinch black pepper
    ½ teaspoon red pepper powder, use more if don’t have pepper paste
    1 teaspoon pomegranate molasses
    2 tablespoons olive oil
    1 tablespoon lemon juice
    10 sprigs parsley
    TACO ÇİĞ KÖFTE
    Ingredients:
    Çiğ köfte
    1 medium onion, finely chopped
    1 pinch sumac
    2 teaspoons of olive oil
    4 slices cheddar cheese, small slices
    Quarter iceberg lettuce (120 g), sliced
    12 sprigs of parsley, chopped
    The rest of the tomato that you used for çiğ köfte
    2-3 gherkins, sliced
    1 small pack of Doritos nacho, crushed, or any chips that you like
    4 mini tortilla breads
    Directions:
    • Soak the bulgur with 4-5 tablespoons of hot water to make it swell.
    • While the bulgur is swelling, blend the onion, tomato, garlic, sweet pepper paste, and tomato paste in a food processor with 2 small ice cubes.
    • Add the pomegranate molasses, olive oil, salt, black pepper, ketchup, red pepper powder, cumin, sumac, isot and lemon juice to the food processor and mix all the ingredients thoroughly. Add in the soaked bulgur and peanuts and parsley and pulse until all blended. You can add another ice cubes depending on the bulgur. Stop the food processor from time to time and push the mixture down to prevent any big pieces from remaining inside.
    • Traditionally we serve the çiğ köfte with some lettuce leaves, turnip, parsley, lemons, and more pomegranate molasses. But in this video, we try something different from classic!
    • To make the çiğ köfte taco while the çiğ köfte mixture rests for a while, you can prepare the taco ingredients. Mix the onion and parsley with a pinch of salt, some olive oil, and a pinch of sumac. You can soften the lettuce with a pinch of salt.
    • Put 1 heaping tablespoon of çiğ köfte mixture into the tortilla breads and spread. You can put half a handful of crushed Doritos, lettuce, tomatoes, 1-2 sprigs of parsley, pickles, sumac onions, cheese and finally more Doritos on top and serve.

    Thank you so much for this lovely recipe. We just returned from India. No tofu and we have had enough of Paneer - put on weight too. It is so nice to see both of you children showing the world how good vegetarian food can be. Thank you again🙏🏽.     Living in Istanbul and not being Türk I’m in love in Turkish dishes but still can’t understand çiğ köfte. I can eat only one and it’s enough, lol. I can eat everything, even kokoreç which is way too difficult for many people, but not this. Maybe I will try this recipe for my wife, who loves this dish ❤

    Wow, this was super tasty! And quick. Refika and team really know food!
    I had to make a few substitutions and changes:
    - Used 1/2 a tomato because mine was a bit bland
    - Walnuts instead of peanuts
    - Couldn’t find sweet pepper paste, but I had a jar of Harissa paste which the ingredients listed as predominantly peppers so I used an equal amount
    - No Isot pepper to be found. I considered chipotle for the smokiness, but the Harissa paste was a bit smoky and slightly spicy so I used 1/2 tsp Aleppo red pepper flakes (which I bought because Refika told me to)
    - I assumed red pepper powder to be sweet paprika
    - No ice cubes because my ancient Braun food processor is a powerhouse that rarely heats up
    Even with all the changes, it still turned out delicious! I feel like this is a very forgiving recipe I’ll be able to tweak, but it’s so good as stated I can’t imagine wanting to change a thing. Plus it’s so healthy!

    I made a gluten free lower carb version of this that is so delicious. I substituted ground lupin for the bulgur and 1/2 tsp. cayenne and 1/2 tsp. chipotle powder instead of the isot and the full teaspoon of cayenne. Mine has a mild spice level. I also used less but used cilantro instead of parsley because I only had cilantro and I wanted to make them as tacos. I also only used 1 tsp. pomegranate molasses since it is so high in carbs. I put a little gluten free soy sauce and a little allulose syrup instead of the honey Refika suggested. I had to make these changes because of my diet and ingredient availability. No matter, it is so delicious! Thanks Refika and your team! I love your channel!!

      This was softer than Refika's but it worked for tacos. If you want it firmer, add another 2 tbsp. ground lupin.

      If anyone was curious it DOES freeze well. I just thaw in my fridge and use with no negative impact on flavor or texture.

    When you say pepper paste, do you mean hot pepper like chilli. Or what we in Australia would call capsicum, which is the sweet not spicy bell pepper

    I love this Refika! But wholewheat burghul is not available in Malta. Making with white. Will it make much difference? I love your vegetarian recipes keep them coming. ❤ Marina

      It might change the texture a bit, but you don't really taste bulgur in cogkofte. It's just there to soak spice & juices and give it some structure.
