I have the healtech Gipro DS gear indicator on my k5 750 plugs right into the diagnostic port super simple. And I love it. Cool video though! My buddy has a 08 cbr 600 and I noticed the same things. His bike also feels lighter up top to me than my bike.
I used to have a 2008 CBR600RR then I sold it for a 2019 GSXR 600. The CBR is more comfortable in city rides and makes me more confident on corners. The 2019 Gixxer is way better on highway rides and I feel more confident doing high speed runs and drag racing. I like the Gixxer gauge cluster because it's larger and more clear and the shift light indicator is amazing, and I don't miss the fuel gauge on the CBR.
More input need for steering you feel is probably Honda electric steering dampener that activates in higher speeds. This will reduce the change of tank slapper.
There not happy unless there singing Got 94 GSXR 750. Put 01 1200 oil cooled bandit motor in it. Lost a gear 5 1200 6 750 lost 6 hp 118 to 112 1200. But wholly crap this thing marches form 6500 to red line tops at 151.
My first bikes were a 2002 gsxr 600 and a 2007 gsxr 600. I have a 2019 Yamaha R1 currently and the gsxr felt way way more comfortable than my R1.
But you can’t beat the look of the new Yamahas bro 👀

Gsxr’s do sit a little lower but they are also noticeably wider
I work for bmw and my K5 is considerably more focused over onto the bars that any other bike
