Hi there, nice video! Nope, you're not supposed to peel off that bottom layer of the Lebkuchen. ;-) That's something called "Oblate" and it's basically a very thin, very plain wafer (pretty similar to the thing which is used during a mass at a church, acutally). Lebkuchen dough is very sticky before baking. The bakers used the Oblaten so the Lebkuchen would not stick to the baking pan. Of course, in the day and age of baking sheets you wouldn't actually need that "anti-stick layer", but it's the traditional way and so they kept the Oblaten. 😉

The sweetness of Lebkuchen comes from honey. So they are not as sweet.
Weißgerber Gasse was pronounced perfectly.
The castle was build by the German Kaiser (which mandatory needed to be the German king as well) and the city belonged to the Kaiser directly until 1806. The walls as you experienced it are build during the 16th century.

I don't believe the main market is only open weekends. Based on the website, it looks like its daily (but obviously less busy on a random weekday). That might be incorrect but its what I'm see online.
No it’s open every day of the week around Christmas season! We just visited on a weekend since we work during the week :)
