    vanilla, coffee and salt are flavor enhancers. Vanilla and coffee have flavors of their own, but adding a little of them to a chocolate cake recipe will enhance and deepen the flavor.

      That said, a lot of recipes vastly overuse the vanilla. So many dessert recipes, especially ones from the US, use so much vanilla that if you’re using good quality vanilla it’s all you can taste in the end. A recipe I use for a local dish uses 1/4 teaspoon of vanilla - my friend in the US made a version with a US recipe that used two tablespoons! You couldn’t taste anything else.

      @@tigereyemusic agreed. Usually, if there is vanilla in a recipe, I halve if not quarter the amount I add. It's too much otherwise.

      I’m baking your final recipe now but my batter came out a bit thicker than yours. I went ahead and put it in the oven but am wondering if I should have added a little more liquid of some sort to thin it a tad. Your thoughts?

    Could you, kindly, correct the name? And these recipes aren't even that weird. OK, so mayo and mashed potatoes, sure, but that's just two odd recipes. Where's the ketchup cake? Tomato soup works too. Or beetroot cake? A little bit of chili and cinnamon in the mixture? They say sauerkraut makes an amazingly moist cake.
    I like Lena too much to just ignore this. You shouldn't be lying on the name of your video, just to get viewers, because we will quickly learn you do that, and not come back.

      There are chocolate cake recipes with BEEF in them. These didn't even approach weird.

    Wow I don't really get why the comments are so negative. I thought this was a super great video! It was fun to see the progress of perfecting a recipe, and I made this cake today and it really is fantastic! The best chocolate cake I've ever had. I did add some powdered sugar to the ganache for more structure, but the cake itself is perfect!

      sinny k I’ve actually made chocolate cake out of soda (it was an ingredient along with brewed coffee) and brownies out of Oreos (it was the main ingredient with chocolate and water)

    I made this cake last night for friends. It came out sooo good! So moist and not too sweet. Definitely one of the best chocolate cakes I've ever had. Where I live its difficult to find buttermilk so I mixed a cup of regular milk with a tablespoon of lemon juice as substitute. The ingredients mentioned in the video are just for a single layer of cake. For the double layer recipe go to the link in the description box.

      Weird that the recipe linked to this video doesn't coincide with the actual final best recipe. No brown sugar in the linked recipe and there's sour cream included, which wasn't in the video. Confusing for folks that would like to try the actual recipe.
      I did enjoy the video tho, and wondered what y'all did with the leftover cakes. Cake pops perhaps?

    Was hoping Lena had tested a Sachertorte (Austria) recipe since many claim it's the best chocolate cake in the world. Cafe Sabarsky near Delish serves a good rendition. I had the original in Vienna...don't know if it's the best in the world but definitely super tasty. Love this series. Lena always does a terrific job...and June is a great taster/critic. 😀👍

      I lived in Vienna and had the original for a few times. Honestly not the best thing ever to me - quite sweet and so dry! Back home we make very moist cakes, so a dry sponge with a bit of chocolate and marillen jam didn't cut it for me.

      @@nicoleranieri8033 doesn't the original Vienna recipe also use apricot jam? I absolutely loathe apricots in any form. Had a version with a tart raspberry filling, chocolate ganache and moist cake---SO good!!

      I'm a tourist guide in Vienna and it's kinda common knowledge among us that the original Sacher cake at the Hotel Sacher is notoriously dry. I haven't eaten it there but another traditional Sacher cake is served at Demels café and I've heard that it's better. I should really go and try, for research purposes obviously!

      @pagelen Yes. I had read many reviews prior to my visit to Hotel Sacher indicating the original was *_very dry_* but that was not my experience. I also visited Demel of course and had their apfelstrudel. Quite nice.

    Great video! So interesting to watch someone create a cake recipe. I tinker, but not like this, and to see a yummy cake without eggs surprised me. Would love to see this with a chocolate Swiss Meringue Buttercream. For me, whipped ganache frosting, even with cream cheese, is just too rich. The SMBC is more buttery than it is sweet, and easier than it seems to make.

    HelloChef Lena, I was just watching you as you started Flouring your Baking Pans and I was wondering why you use the flour instead of Cocoa Powder? I used to use flour but it made my Chocolate Cakes look discolored after baking . I have since used the Hershey’s Unsweetened Baking Chocolate and my goods look much better.

    Mayo cake is my mom's standard chocolate cake recipe, topped with a fudge icing. She has also made, and it is good, a sauerkraut chocolate cake. It works, and it doesn't taste like sauerkraut.

    Find a recipe at America's Test Kitchen were they use good cocoa powder mixed in boiling water and allowed to cool before adding to the cake mix ... this action blooms the chocolate flavor. I believe coffee then vanilla are also added to this liquid. There is butter in this cake as well.
    The mayo cake has 3 strengths by adding 1/3 cup of cocoa for a mild chocolate flavor, 1/2 cup of cocoa for a medium chocolate flavor and 2/3 to 3/4 cup for a really strong killer chocolate flavor. You don't taste the mayo, it is there to replace the fat. This is a fun experiment.

      Depends if you have the same preferences. I for once would go with butter over vegi oil, but still need to taste test both versions for a final verdict. Nevertheless seeing the process of creating different version is helpfull.

      @@kinngrimm I get you. For me the video showed me the moist texture that oil offers, but then I think I'd also like the yummy flavour that butter offers. So in my first attempt of my "ideal recipe" I plan to use a combo of both, and then tweak it from there.

    Sometimes I want to try several (top rated) recipes of a certain dish to zero in on the best of the best. But there aren't enough folks around here to eat up all the trials and I don't have the $$$$ to spend on such experiments. So glad to see this done for me and I'm excited to try your final recipe. Conventional assumption is butter makes everything better. I thought so too but not so with chocolate cake . Something about oil just makes for a moistness you wont get with butter.

      Ann Sidbrant well, that’s because she’s a liar. If I didn’t double the entire recipe, I would have had thin, bland chocolate cake. 1 1/2 cups of flower was definitely not enough and neither was 1 cup of sugar

      @@marianafares You probably don't like it because most recipes have way too much in them. Pretty much every chocolate you buy on the shelves, high quality or low, has vanilla in it for a reason. They only use a tiny bit though.

    I've tried it...not really a fan of this recipe sorry too much of the coffee..
    Edited: it turns out to be super2 good similar like brownies.. I love itt so much.. The first day I can still taste the coffee but then few days after.. It was super moist delicious. Perfect. 👏👏👏👏

    I’m no chef, but I’ve made my fair share of cakes. I followed the last and “perfect” recipe for my boyfriend’s birthday cake and he said it was pretty dry....and I agree with him.
    Edit: The flavors were great! The frosting was amazing. The cake itself was just a bit too dry for my personal taste.

    Mccall’s (magazine)had a cookbook (1950s) that has a Perfect Chocolate Cake recipe. Add the espresso and is great cake

    My son was deathly allergic to eggs for most of his childhood. I'm a chef and my first thought was mayo cake! I could sub Vegenaise for the mayo. I have figured better out since then but that was a good starting point.
    I think for the potatoe cake the potatoes should be steamed and then riced.It would make for a fluffier product 🤷‍♀️

    So I made this cake recently. My first batch was a failure. Delicious, but a failure. I don't know what I did wrong. It may have been that i cooled the coffee before adding it, and I added the dry to the wet instead of other way around. So I followed exactly the second time without making assumptions and it was perfect. Do note: if you want to make the two cakes and stack them, then you need to double the recipe. The blog has that specific one, but it's exactly the same only doubled.
    When I'm on my deathbed, my final wish is to be put in a tub of that frosting and given a spoon.

    All these were fine, basically all variations of basic chocolate cake recipes, but there is one she never even came close to trying, the depression era "wacky cake", by all accounts it was developed because eggs and butter were so hard to come by so none are needed. It uses vinegar and baking soda for rise, and it is amazing.

    Vanilla amplifies other flavors. Just like instant coffee helps chocolate specifically, both make it even better. ;)

    I usually use cocoa powder in place of flour in the pan. that way the chocolate cake has no white ring.

    Ok heres the deal.
    This cake had been sitting at the back of my mind for a reeeaaaly long time.i was interested to see how the brown sugar and the no eggs would turn out so i looked to the comments for some review.But all everyone had to say was about the title being wrong and how the taste testers at the end were being "helpful" or something. So i ignored this one for the longest time.
    Today i was going through the fridge and found some leftover cream cheese white chocolate ganache at the back of my fridge which had been ignored for 2 weeks since a red velvet cake i had made.so i decided that i would use all that up by making this chocolate cake.initially i was doubtful...as i dont get Dutch processed cocoa where i live so instead added a small pinch of sodium bicarbonate to the natural cocoa to substitute. The batter seemed delicious and i baked a half batch in one 6 inch cake tin.i did have to give it an extra 15 min in the oven though to get my toothpick clean.to cool the cake i just let it hang around for 15 min and then i chucked it in the freezer.15 minutes later i took them out of the pan and the crumbs were tearing out easily. I frosted the chilled cake with cream cheese white chocolate ganache from the cupcake savvy's kitchen channel which i have to say is quite runny but really delicious for red velvet tho and to that i put more vanilla and coco powder and salt.when i cut the cake i could really smell the brown sugar and i was like oh nnooooooo.but with the frosting it tasted fine.will try the original one mentioned the next time.the cake is the perfect chocolatiness i have to say.i cant taste the coffee or the brown sugar and im not misssing the eggs but i wish i had given my cake an extra few minutes because the center is still kinda underdone.the cake sticks in my mouth a little .Happy with the results and will try it again next time too.just wanted to be helpful to some people who are looking to the comments for review.but is this the ultimate cake that I'll have to compare this with other cakes side by side.thanks for listening to my banter!happy baking...

    I have tried 3 different recipes of Chocolate cake and this is the best one I've tried. Thank you for this video and your recipe! My daughter and I love this chocolate cake over the other ones we tried. And it is simple to make too, no creaming of butter, no hand mixer or no sifting. Just a request, kindly don't move the camera too much during filming, for those who have motion sickness, the abrupt camera movement can make you dizzy. Thanks!

    Choc cake doesn’t need essence or coffee but they both enhance the flavour. However, taste is a subjective thing so whats good for one may not be good for another. Ganache can and is quite often used for the outside of cakes. My brother’s wedding cake was layered and coated in ganache and it was gorgeous. Unwhipped ofc. Its up to you how thick you make it.

    The cake is ok, its not as moist as i would like it to be, but it isnt dry either. You can hear the sponge when you put your fork through it. The chocolate flavor is mild as well. I would add 1 egg, some melted dark chocolate, cocoa powder and extra oil next time i make this.
    As for the ganache, i made the mistake of adding it to the cream cheese while it was still warm, which melted my cream cheese and gave me a soupy mixture. I chilled it overnight which looked great, then 20 min at room tempurature its like icing melting in the heat.
    I will rate this 8/10

    The easiest way to trim a cake is put it on a cake stand (for decorating, not display), hold the knife stationary and spin the cake stand, slowly pushing the knife further into the cake. Get eye level with it so you can watch your cut. Sawing across it will almost always be uneven and you risk tearing it by making a sawing motion. You can do this to cut layers as well.

    I noticed there are no eggs in the final recipe but the frosting looks great, I think I'm going to try that frosting...i might get adventurous and try the final cake recipe and see just how good it really is because I haven't heard those ladies rave about the final cake..i was expecting changed faces and satisfied sounds coming from them. The most satisfied thing about this video is the cake pouring :)

    i just never feel satisfied with her taste test comments, they're alway so simple "it's nice, tastes okay" "this one is not the best" "i like the texture" like what is the point if we can't get a good idea of what makes each new recipe good or bad or great. it's a recipe test show! give us more info about how the recipes differ and taste!!!

    With the first taste testers, the girl with the glasses on the left really knew her stuff and cared, the girl on the right seems to be like one of those employees who's along for the ride! I really wonder how it tasted without vanilla and without buttercream? I love vanilla and I love buttercream. Probably good and a little fancy, but different. I did not like how those women didn't give feedback on the cake at the end. That's literally their job!
