I think the reason the fish is being left out of the Sea Prune Soup is because it's supposed to replicate having a bunch of leftover fish bones and duck carcass etc. The broth is really just a way to make use of leftover bits from other things you've cooked that aren't going to get used elsewhere, and this is a decent way to approximate that.
In Brazil we have a real recipe like that. We use the fish meat in a cassarole and save the bones and left overs to make a sauce, we then drain the liquid from the bones and heads and thick it with mandioca flour to eat with the cooked meat, rice and other side dishes.

I suspect that only having duck feet was a major factor. The flavour and richness of meat broths is generally imparted by the bone marrow, of which there is not much in the feet. Fowl feet are typically used because they contain a lot of collagen which can give a broth a silky texture, but for taste they are pretty useless.
Agreed. When I think duck carcass I think of the bones of a roasted duck after the meat is picked off. I can imagine the bones and duck fat would leave the broth with a great flavor.

Strain over another pot w/ a collander, and the meat just falls right off the bones. Once we've picked out the skin and bones, in go potatoes, carrots, onions, 2 bay leaves and spices, then egg noodles or rice~ That sh*t is the BOMB, and so much less waste!!
I actually am friends with the chef who wrote this book. Jenny is amazing, such a multifaceted and passionate person who put a lot of love, research, and passion into these recipes to capture how the show made her feel. Not all the recipes are for everyone, but knowing where her heart was in making this makes the biggest impact ♥️

Which made me giggle when he thought the fish sticking was a mistake lol. Bones also impart flavor. I do agree with him though if you can get the fish parts with using a whole fish then do that or just buy a fish stock. This is a useful technique to learn for sure.

I love that they didn't shy away from using Asian ingredientses. While they might not be easy to find I think it encourages people that would usually avoid trying these things out because of that that live in countries like the the US or in Europe to actually try out these dishes and new flavors.
I LOVE how detailed every piece of the show is. The show takes place in war so obviously some of the recipes are more struggle food. It also shows the wealth gap between the nations. I love how they kept it real and the recipes are actually from the show. This show always manages to surprise me. So good and detailed! I somehow always forget that our main characters are war children/children from war
It doesn't make sense to cook a fish & not use it in our world but in the Water Tribe they probably use every part of the fish & so the bones went into soup & the fish got used for other things like dried meat to eat on hunts.
I think what's throwing the recipe off is the duck tbh. When you look at the Water Tribe, what they would be using is Arctic animals, which ducks are not. I get that not everyone is able to just pull out an Arctic bird, but there's gotta be a better substitute.

From my understanding of inuit and arctic cultures, they used every part of what they hunted and fished, so I think the stewed sea prunes soup is a dish where you used pieces of the fish you would normally throw away. Like if you make a fish dish, you eat the fish, but then you save the bones for later. Later being when you want to make sea prune soup.
Sea prune soup sounds like what they wouldve had to do during the days they couldnt go out hunting or was the height of the winter months. They wouldve used whatever was leftover to substain themselves and that is honestly like a really good story detail since its a food that is about substaining yourself not the taste.

Based purely off the ingredients, sea prune soup seems like a great way to use leftover ingredients. I make broth out of leftover chicken and fish bones from my meals on the regular to use the bones and for health. It helps me take my vitamins but I always add a ton of fresh cracked pepper and either fish sauce or a MSG+paprika+curry+mustard powder mix cuz it tastes like not much. Sorry for all that paragraph lol, hope the engagement helps! Eager to see more of your hard work with food!

@jhivarr I've added other suggested ingredients to bone broth, plus I like to also add organic ground ginger and ground onion powder and fresh ground black pepper as well, but NO msg for me, I'm very allergic and end up with horrific migraine among other complications.
looking at the recipe it looks like it would be something made from leftovers of other meals, hence the fishbones and the duck marrow/bones (made to emulate the arctic hens from the water tribes). i wouldn't be surprised if the base of the soup couldve been more fish forward depending on what was left over that week hehe

Do you mean the Netflix adaptation or the new movies from Avatar Studios? Because the Netflix adaptation isn't a movie, it's a live action version of the show. Season 1 will take place over 8 hour-long episodes and comes out next year.

We have lots of fishy soups in Cantonese cooking and I always use the fish head too when I'm making the broth (with some rice wine to cover up any odd flavors). And instead of the duck feet, a whole bunch of chicken wings might have made the broth more intense.
11:07 For fish maw, I’d probably say try fish maw soup or a crab meat & fish maw soup from a place that serves it, with the soups being similar to egg drop soup in consistency.

Toasted barley flour is pretty easy to make in small batches with a spice or coffee grinder. If your Asian grocery doesn't carry Tibetan food, most supermarkets carry whole barley. I'd like to see the Fire Flakes too, just rewatched Babish's version of them a couple days ago.
Very fun show. No surprise they get a little out there with ingredients but it is a world spanning epic and a lot of items are probably going to be found at an asian market. If you have extra time and like a book then by all means show off some interesting recipes, the 3-4 meal sampler is nice for an initial review but there are probably a lot of nice dishes that look great but you already picked a soup/salad like it

I'm so impressed by the amount of creativity and passion that went into this cookbook. Everything feels so real to the world. I also really enjoyed your efforts testing the recipes! It's great to see the highs and lows of making challenging or unusual dishes.
Dried morels seems like a strange choice. I don't think morels are typical enjoyed dried and rehydrated like many other mushrooms. Surprised they didn't use shiitake which is more typical, the water you rehydrate them in makes for an amazing umami broth base. I don't know much about fish maw though.
There's definitely a lot of channels that does food from fictional shows/games lately, but its crazy that none covered the topics of licensed cookbooks like you did! Your personality, presentation (both videos and cooking!) and niche topic combined makes your channel really shines and you definitely deserves more views! As for suggestions, how about the Bee and Puppycat cookbook, especially since the series is going to be on Netflix? The recipes seems to be fan-submitted, which could be interesting!

The peaches are similar to what my mom used to make on hot summer days. She'd take yellow peaches cut them in half or thirds and would grill them on one side until well..grilled. And then we'd slap vanilla ice cream on top. Literally the best thing ever
I feel like the soup is supposed to taste like a "Struggle meal". Which would explain why you use fish bones. Think how chicken and waffles should use leftover fried chicken or chicken pot pie is supposed to used leftover chicken. But I'd definitely want this book despite the difficulty of obtaining any ingredients.
I always start with the stuff I think I'm gonna hate, so that I can immediately cover it up with other flavors, that I know I'm gonna love.. Bold move to save that soup second to last.

You can make your own hazelnut flour by simply grinding hazelnuts in a food processor or blender until they are the texture you're going for... I'm betting the barley could be done the same way, but you may want a finer grind than you can achieve with a processor/blender... if you have a flour mill, then go for it, but that one sounds like it'll need to be an internet purchase.
When cooking fish maw, it's best to deep fry them they puff more) and then immediately throw them in cold water in order to rehydrate. That way they will cook through later and it's also easier to cut them.
Really appreciate this video. I got the cookbook a bit ago and have just been lazing around not trying anything in it. You chose some recipes that didn't really interest me (the fire flakes and bean curd puffs) that I am now going to put on the list when I decide to do some bulk shopping next time! Also, small note, the sea prune soup having a duck carcass in there seems a little odd but there are a decent amount of recipes that include duck meat there, so probably was a recipe to deal with the extra bits. You can make your own hazelnut flour by processing whole hazelnuts in a strong blender like a vitamix. Once it’s completely ground into a powder u can use it like any other nut flour. You can do the same with barley, dry toast the barley on a pan till it browns then process in the blender till it’s a powder. I hope this helps and you can make the tarts!
You can do the same with other nuts and grains too! I used to work at a bakery and whenever we ran out of oat flour or almond flour we would just process whole oats or almonds till it turns into a powder!

This is probably crazy late but I've found if you check the wackier health food shops--the very holistic, smell the patchouli from a mile off ones--they tend to stock a lot of the alternative nut and grain flours. You might have better luck with the barley and/or hazelnut flours there.
The aangs favorite egg tart is amazing!! I have made that multiple times. Luckily there is a local mill near me and I was able to get all the flours I needed for it easily. If you can find them you have to make them. The freedom fighters pork belly is amazing as well.
personally regarding the fish soup, I asked my mom, and she said really depends on whether you wanna eat the whole fish (flesh) or just having the soup. The frying part was correct, she would, if she want to eat the flesh afterwards, put it away until the last moments you finish making the broth with the cartilage. Usually you would put fish cartilage in a bag, and ginger, and any spices you want, because otherwise, fish smells are bad. why the bag though? so it will prevent the cartilage from floating into the soup, you don't want to drink soup with bones in them yeah? From what i expected if i follow the steps in this comment, add a bit of seaweed and spring onion, will make the soup pretty nice. I love the tofu stuffing btw, they are also one of my faves my mom makes. Especially with minced fish meat. As for what I want you to cook, the earth kingdom mochi (???) with the lotus salad looks fun ❤

I’d much rather have authentic ingredients and just sub something out if I need to, rather than having overly generalized recipes that would probably come out pretty mid. Definitely buying!
Since the water tribes mimic indigenous/alaskan tribes in real life, they also follow a "use everything" philosophy. The duck carcass and additional bones were to make more of a bone broth/fatty stew and duck feet by themselves wont do that since they're mostly collagen anyways. I would have added the fish anyways due to there being no duck.

Toasted Barley Flour & Hazelnut Flour should be simple to make, if you have a good food processor or high end blender. The trick is processing the hazelnuts into a flour without making hazelnut butter. Same with barley, then you'd toast it in the oven or in a pan on the stove until it darkens & looks toasted.

So for the Sea Prune soup it is definitely no typo. Your are suppose to only use the bones, that is how stock is made. Another name for stock in 'bone broth'. The taste is mainly from the bone marrow. Normally when you use bones in a stock you simmer it for hours, sometimes even up to a whole day. It was and still is a great way to reduce food waste, you can just freeze leftover and use them later to make a stock.
"Is the show worth a watch?" you say...What are you waiting for!? Although I wouldn't call it "not too long" it's 61 episodes even if you don't plan on watching Legend of Korra but you might end up binging it in a flash because it is quite fun and captivating.

As far as I'm aware, they're literally just unfried cookies. Either carnival funnel cake dough(similar to pancake mix), or a sugar cookie. Just don't use raw egg if you want the utmost safety. But I've eaten my fair share of entirely raw sugar cookies and yeah. Pretty damn tasty. It's why I liked them in the show, 'cause I know how it tastes.

The soup actually looks kinda tasty (although I would add fish sauce to the broth) but I was totally thrown off when the duck feet suddenly appeared on screen 😅 I don't even know where I could buy these, let alone the dried mushrooms. Aww please do the fireflakes and perhaps the egg tart! Maybe you could try to substitute the ingredients somehow or do it without the roasted flowers (their taste is probably quite subtle but who knows). I just looked up what "roasted hazelnut flowers" are supposed to taste like but I didn't find anything at all

It doesn't make sense to cook a fish & not use it in our world but in the Water Tribe they probably use every part of the fish & so the bones went into soup & the fish got used for other things like dried meat to eat on hunts.
I think what's throwing the recipe off is the duck tbh. When you look at the Water Tribe, what they would be using is Arctic animals, which ducks are not. I get that not everyone is able to just pull out an Arctic bird, but there's gotta be a better substitute.

From my understanding of inuit and arctic cultures, they used every part of what they hunted and fished, so I think the stewed sea prunes soup is a dish where you used pieces of the fish you would normally throw away. Like if you make a fish dish, you eat the fish, but then you save the bones for later. Later being when you want to make sea prune soup.
Sea prune soup sounds like what they wouldve had to do during the days they couldnt go out hunting or was the height of the winter months. They wouldve used whatever was leftover to substain themselves and that is honestly like a really good story detail since its a food that is about substaining yourself not the taste.

Based purely off the ingredients, sea prune soup seems like a great way to use leftover ingredients. I make broth out of leftover chicken and fish bones from my meals on the regular to use the bones and for health. It helps me take my vitamins but I always add a ton of fresh cracked pepper and either fish sauce or a MSG+paprika+curry+mustard powder mix cuz it tastes like not much. Sorry for all that paragraph lol, hope the engagement helps! Eager to see more of your hard work with food!

looking at the recipe it looks like it would be something made from leftovers of other meals, hence the fishbones and the duck marrow/bones (made to emulate the arctic hens from the water tribes). i wouldn't be surprised if the base of the soup couldve been more fish forward depending on what was left over that week hehe

We have lots of fishy soups in Cantonese cooking and I always use the fish head too when I'm making the broth (with some rice wine to cover up any odd flavors). And instead of the duck feet, a whole bunch of chicken wings might have made the broth more intense.

I love how the Stirred Sea Prune Stew was actually accurate in its taste and texture (not that I’ve tasted it), because the way you described it makes sense and the fact that they included it like that in the cookbook is just amazing! Toasted barley flour is pretty easy to make in small batches with a spice or coffee grinder. If your Asian grocery doesn't carry Tibetan food, most supermarkets carry whole barley.
I'd like to see the Fire Flakes too, just rewatched Babish's version of them a couple days ago.
And hazelnut flour is probably just like almond flour - put the nuts in blender or food processor and whiz until pretty fine.
Very fun show. No surprise they get a little out there with ingredients but it is a world spanning epic and a lot of items are probably going to be found at an asian market. If you have extra time and like a book then by all means show off some interesting recipes, the 3-4 meal sampler is nice for an initial review but there are probably a lot of nice dishes that look great but you already picked a soup/salad like it
Just watched the Aunt Wu episode yesterday. Didn't really think about what tthe puffs were probably fried in. Think Aang knew it was most likely animal fat when he passed on them?
A vegetarian alternative would be soybean oil or another vegetable oil

Dried morels seems like a strange choice. I don't think morels are typical enjoyed dried and rehydrated like many other mushrooms. Surprised they didn't use shiitake which is more typical, the water you rehydrate them in makes for an amazing umami broth base. I don't know much about fish maw though.

There's definitely a lot of channels that does food from fictional shows/games lately, but its crazy that none covered the topics of licensed cookbooks like you did! Your personality, presentation (both videos and cooking!) and niche topic combined makes your channel really shines and you definitely deserves more views!
As for suggestions, how about the Bee and Puppycat cookbook, especially since the series is going to be on Netflix? The recipes seems to be fan-submitted, which could be interesting!

The peaches are similar to what my mom used to make on hot summer days. She'd take yellow peaches cut them in half or thirds and would grill them on one side until well..grilled. And then we'd slap vanilla ice cream on top. Literally the best thing ever
I feel like the soup is supposed to taste like a "Struggle meal". Which would explain why you use fish bones. Think how chicken and waffles should use leftover fried chicken or chicken pot pie is supposed to used leftover chicken.
But I'd definitely want this book despite the difficulty of obtaining any ingredients.

You can make your own hazelnut flour by simply grinding hazelnuts in a food processor or blender until they are the texture you're going for... I'm betting the barley could be done the same way, but you may want a finer grind than you can achieve with a processor/blender... if you have a flour mill, then go for it, but that one sounds like it'll need to be an internet purchase.

It took a while but youtube has finally recommended something that I am excited about. I love coming across anything ATLA.
When cooking fish maw, it's best to deep fry them they puff more) and then immediately throw them in cold water in order to rehydrate. That way they will cook through later and it's also easier to cut them.
Really appreciate this video. I got the cookbook a bit ago and have just been lazing around not trying anything in it. You chose some recipes that didn't really interest me (the fire flakes and bean curd puffs) that I am now going to put on the list when I decide to do some bulk shopping next time!
Also, small note, the sea prune soup having a duck carcass in there seems a little odd but there are a decent amount of recipes that include duck meat there, so probably was a recipe to deal with the extra bits. Great work and def subscribed!

Yes I would like to see you make the tart cakes and the fire flakes.
You can make your own hazelnut flour by processing whole hazelnuts in a strong blender like a vitamix. Once it’s completely ground into a powder u can use it like any other nut flour. You can do the same with barley, dry toast the barley on a pan till it browns then process in the blender till it’s a powder. I hope this helps and you can make the tarts!
You can do the same with other nuts and grains too! I used to work at a bakery and whenever we ran out of oat flour or almond flour we would just process whole oats or almonds till it turns into a powder!

This is probably crazy late but I've found if you check the wackier health food shops--the very holistic, smell the patchouli from a mile off ones--they tend to stock a lot of the alternative nut and grain flours. You might have better luck with the barley and/or hazelnut flours there.
The aangs favorite egg tart is amazing!! I have made that multiple times. Luckily there is a local mill near me and I was able to get all the flours I needed for it easily. If you can find them you have to make them.
The freedom fighters pork belly is amazing as well.
personally regarding the fish soup, I asked my mom, and she said really depends on whether you wanna eat the whole fish (flesh) or just having the soup. The frying part was correct, she would, if she want to eat the flesh afterwards, put it away until the last moments you finish making the broth with the cartilage. Usually you would put fish cartilage in a bag, and ginger, and any spices you want, because otherwise, fish smells are bad.
why the bag though? so it will prevent the cartilage from floating into the soup, you don't want to drink soup with bones in them yeah?
From what i expected if i follow the steps in this comment, add a bit of seaweed and spring onion, will make the soup pretty nice.
I love the tofu stuffing btw, they are also one of my faves my mom makes. Especially with minced fish meat.
As for what I want you to cook, the earth kingdom mochi (???) with the lotus salad looks fun ❤

Since the water tribes mimic indigenous/alaskan tribes in real life, they also follow a "use everything" philosophy. The duck carcass and additional bones were to make more of a bone broth/fatty stew and duck feet by themselves wont do that since they're mostly collagen anyways. I would have added the fish anyways due to there being no duck.

Toasted Barley Flour & Hazelnut Flour should be simple to make, if you have a good food processor or high end blender. The trick is processing the hazelnuts into a flour without making hazelnut butter. Same with barley, then you'd toast it in the oven or in a pan on the stove until it darkens & looks toasted.

I feel a little disappointed that the soup didn't actually have prunes in it. I think a thick, salty stew with real prunes in it would be delicious
I'm guessing "sea prunes" aren't actually prunes, in the same way that a sea cucumber isn't a cucumber.
There's a Scottish stew that includes chicken wings, leeks and prunes. It's called Cock-a-leekie, and it's quite good.

So for the Sea Prune soup it is definitely no typo. Your are suppose to only use the bones, that is how stock is made. Another name for stock in 'bone broth'. The taste is mainly from the bone marrow. Normally when you use bones in a stock you simmer it for hours, sometimes even up to a whole day. It was and still is a great way to reduce food waste, you can just freeze leftover and use them later to make a stock.
Of course we want to see those recipes! And make some tea! 🍵

I'd say yes! It's one of the best cartoon series of all time, in my opinion. Perfect for kids and adults-- which can be a tough balance sometimes.

As far as I'm aware, they're literally just unfried cookies. Either carnival funnel cake dough(similar to pancake mix), or a sugar cookie.
Just don't use raw egg if you want the utmost safety. But I've eaten my fair share of entirely raw sugar cookies and yeah. Pretty damn tasty. It's why I liked them in the show, 'cause I know how it tastes.

But yeah the cookbook probably just went with a raw cookie dough since I can't imagine uncooked you tiao tasting good at all.

But in terms of being tasty, I too would assume they'd go for raw sugar cookie dough.

Aww please do the fireflakes and perhaps the egg tart! Maybe you could try to substitute the ingredients somehow or do it without the roasted flowers (their taste is probably quite subtle but who knows). I just looked up what "roasted hazelnut flowers" are supposed to taste like but I didn't find anything at all
