I totally agree with plants being the cheapest way to eat! I'm also a college student living on my own--the first thing I learned was that I can't afford to eat meat every day. Now I eat primarily plants and unprocessed foods, which lets me eat well & healthily on $40-50 a week!
A couple months ago I started spiraling into watching a lot of what I eat in a day videos, yours and a lot of other vegan youtubers especially. I had always felt uncomfortable if I thought about eating meat, but tried not to think about it since I'm currently a high school student living with my meat and dairy eating family in a small town(my mom grew up on a farm and I have friends from surrounding even smaller towns who live in small farms too). Watching your videos inspired me too finally go vegetarian and I haven't eaten meat for two months and since learning even more about the cruelty of the industries and the environmental effects I've been trying to slowly eat eggs and dairy as little as i currently can, living with my family and surrounded by people who don't really understand at all. In the next few years of high school I'm hoping to be completely vegan by the end when I go to college. I'm so grateful for your channel and love you and all your videos!!

We have been die-hard Albertan meat-eaters since birth and are working in as much fruits and veggies as we can and are now eating about 70% veggie (up from like 20%...) I thought about becoming a vegetarian, but then I heard about veganism and I started watching vegan what I eat in a day videos, including yours. Your food looked so amazing (I love fruit and vegetables), so I decided to look more into veganism and the benefits of being vegan. I learned a lot and finally made a connection to the food on my plate. I'm a young teenager, so my family wasn't exactly excited about the thought of me going vegan. But I just didn't want to eat animal products. Fortunately today I can happily say that I have been vegan for a week and I don't miss animal products at all! I feel much happier than I've been in a long time and I love all the meals I eat now.😊I'm just so grateful that no living being has to suffer anymore in order for me to eat.🐮💖🐷🐥🐔 Thanks for inspiring me to make the best decision I've made in my life!❤🌸

put them in a tupperware box thingy and just put a wet kitchen paper on top, to cover the greens and then the usual lid. should keep fresh a few days longer ! ;)
I have the same problem. In a restaurant I worked at, we would store leafy greens in sealed containers covered with water. Don't know why I haven't tried it. -_- :P
Do a combination! Wash, dry and store in an airtight container with paper towels around the outsides and on the top of the greens to get rid of any excess moisture. If that's too much effort you can just put a paper towel or two in the plastic bag the greens came in. If it's a big bag I'd suggest transferring them to a container though.
Use the mini peppers as nachos! Halve them then top with your favorite nacho toppings and "cheese" then broil til done. So good! Or top with spinach, fresh onion, some pasta sauce and some "cheese" for pizza bites.
Aldi is amazing! They actually have quite a nice variety of vegan prepared foods as well, such as soy milk, falafel, hummus, veggie burgers and ready made soups :)

It's quite interesting to see what Aldi offers in other countries. I'm from Germany and our Aldi doesn't really have any organic fruit or veg which is really annoying. In general we can't get any fresh kale most of they year, it's really a winter-y vegetable that's why they just sell from November to February. It's probably good that they just sell it whilst it is in season but then on the other hand you can buy berries, bananas and other tropical fruit all year around. So count yourself lucky that you can enjoy your kale all year round, haha!

Aldi here (in Ireland) have started doing affordable super food powders (spirulina, cacao etc). they're like 3-4 euro here (I think that's the same roughly in dollars). I never spend money on shit like that personally but now that its so affordable in aldi....dope.
Hi tip the teslly really green bananas can be boiled for 6-10 minutes like plantains Ior fried they have a texture and taste like potatoes you can use vegan scrambled tofu or the new veg egg from follow your heart

I just went vegan about a week ago and I was wondering how people afford it. Everything was costing so much. Whole Foods let me down in regards to options. They rebuilt the one close to me and it now has less options and is more costly than a regular grocery store. Sprouts was nice but still a tad limited and not so cheap either. So basically your videos are helping me quite a bit. Thank you very much for all the videos.

One question though if you don't already have a video like this would it be possible to make a grocery haul and then a meal prep or just recipes that can be made with those same ingredients? If not could you make a list of recipes in the description box if it's not too much trouble?? I'm a new vegan and while I'm more of a snack person like apples with peanut butter I want to try to cook more but I haven't ever really used most vegetables like peppers, zucchini, spring mix, potatoes, etc (just like corn, carrots, tomatoes, and spinach for my smoothies). How do you keep your greens from going bad throughout the week? I swear, no matter how fast I eat them they're all slimy and gross 3 days later :(
Check the temp of your fridge. Also, try to keep them in the crisper as the temp is slightly warmer than being on the top shelf.
